Do you still get a strong blackberry flavor that holds up against the wine? I absolutely love blackberries. I made a liqueur a few months ago, but instead of adding gin-related botanicals, I just did half vodka/half gin, and it turned out amazing. However, I don’t understand the addition of wine. From my research, I did not see wine as an ingredient in store-bought creme de mure. I imagine it is added to make the flavor more complex, but I feel like blackberry flavor would get lost with the wine flavor, since many wines contain flavor notes of all kinds of berries and could make it hard to distinguish a distinct blackberry flavor. My opinion, blackberry liqueur should only contain ingredients that elevate the blackberry, and anything that takes away from it should be left out. Just curious about your experience, thanks!!

Made this cocktail and it tastes amazing. However, not having a scale sensitive enough for the 0.5g measurements, I had to use converted tsp measurements which were not correct. The foam came out as a gelatinous blob. Any reccomendations for tsp measurements before I buy a scale?

Bramble 2.0 definitely looks astonishing. The original cocktail is my go to, when someone tell me they don't know what they want to drink. It is a fail-safe. :@) Thanks for the upgraded version. A bit labour intensive, but probably worth it for such looks. Cheers!
No I didn't and quite honestly, I think Vodka is better here. I understand your idea but it's unnecessary. The gaol with the liqueur is to add new flavors, not to enhance the gin flavor. I don't know if it makes sense

Hello, do frozen berries work in making berry liquer, too?

what does the sous vide do that just cooking on the stove doesnt? is it just making sure the liquid doesnt boil and there's no water loss?
That's pretty much it. It allows you to cook and extract flavours without evaporation so you keep your alcool and the sugar balance.
