Reilly, you are the supreme Aquaman. Those fish are outstanding. Free diving that deep and hunting is not very easy. Hats off to you my brutha. This was a fun video, great job the both of you. You needed a bit more flour while kneading the bread. If it didn't rise you neglected to activate your yeast before adding it the dough mixture. If you would like bread cooked over a fire more often. Invest in a dutch oven. It will come out perfect. Good luck folks, thanks for the great video.

It's been five years and the first SLV loaf is bread mix? Goodness. Hey, it worked. You do need an intervention, however. Sit down girl. I have a recipe for you. This is foolproof, Elayna. You can do it. This is a 'tea biscuits' recipe.
It is from my decades old, old, old reliable stained cookbook with pencilled notes in the margins, just like The Half-Blood Prince marked his potions text in Harry Potter.
This is a non-yeast quick bread. Instead of yeast you'll use baking powder as a rising agent.
    TEA BISCUITS.
You can cook this in an oven, in muffin tins (best) or a cookie sheet, even a flat metal pizza plate if that's what you have. Or, failing that, you can save the dough for a beach camp fire and cook over the fire by thinning out the dough and wrapping it around a stick or or a wire grid and just flip it over when one side is done. That's more like bannock, which is another recipe you should know. Oven works best or have an outdoor oven, something metal you can put in or over fire that can contain the heat while the tea biscuits rise. I haven't used tin foil which you use quite a bit. If using foil, grease the foil first and keep it well above the fire and turn it often. Don't cook the dough in one lump like bread. It will rise better over a camp fire in individual servings. This recipe will make about a dozen servings.
The rising agent here is not yeast. It's baking powder. That's a little more foolproof than a yeast bread. Bannock uses yeast and is ideal for camping. Google bannock recipes. You won't regret it. Now, back to
    TEA BICUITS
////1. Two cups flour. 2. four (heaping) teaspoons baking powder. 3. Pinch of salt (the recipe calls for a teaspoon but we're countering the baking soda for taste.). 4. One quarter cup shortening (or margarine or butter) 5. One cup milk. ///Now, since you live on a boat far from civilization, like a camper or trapper would, use canned milk and go 1 to 1 with water. In other words your liquid should be half a cup of canned milk and add half a cup of water.
//// Combine dry ingredients. Cut in the shortening or butter into chunks with a knife if needed.
/// Then use your hands. You want a crumbly mess the texture of oatmeal filled with fish scales sliding between your fingers. Knead it all with your fingers, in an action like snapping all your fingers to music. Don't punch it or knead it like you would bread. You want it to be broken up and get that baking soda everywhere in it, so the aim is to feel like it is flowing oatmeal between your fingers.
/// Now create one hole in the centre. Pour in all the milk/water in one go. Mix it all with your hands. The stuff will become sticky and stick to your hands and inbetween your fingers. That's normal. (Now, if you didn't grease your muffin tin, now is the point, when you are all sticky you remember you need a greased muffin tin so you yell for help from Riley who takes out a muffin tin or a flat metal pizza plate and greases it while you wait with sticky flour fingers.
///If over a campfire you should be able to cook this like above. Just remember that rising agent needs to work over heat and fluff up the tea biscuits by adding air inside them making them light. So don't bake these in one big glomp like a loaf of bread. Cook individual servings.
///If using a muffin tin grab a handful of finished dough the size of a US hardball- or the size of your fist- keep the air in it, don't squeeze it- and plop that in one muffin tin 'cup' and continue, filling the rest. The batter won't pour like pancake batter. It will be one glomp, which is a metric measurement for campers and yachties.
/// Ideally 350 degrees (450 is okay) for 12 to 15 minutes. You'll be able to smell it. You'll float on air, so you should hang on to something or you'll waft out the door. You'll have a dozen fresh mouthwatering lumpy white tea biscuits of different shapes, golden brown tasty at the tops and bottoms waiting for butter you'll apply with a knife as you watch that butter melt over the golden baked tops of your freshly baked awesome smelling tea biscuits as your mouth waters.

    Elayna,
here is my wife's bread recipe that simply cannot fail (even i can make it)and it looks great
This recipe has been refined over a two year period during which the ratios of the
ingredients have been perfected to bake optimally, make the perfect toast and also make the
most unbelievably delicious, perfect melba toast, thinly sliced and dried in the oven.
Makes two loaves ca. 1,000 g each.
1,125 ml (4.5 cups) cake flour
    625 ml (2.5 cups) oats
250 ml (1 cup) seeds (pumpkin seeds, sunflower seeds, poppy, linseed, sesame seeds, mixed)
    10g (1 packet) instant yeast
30 ml (2 tablespoons) oil (Canola or sunflower)
1,150 ml (4.25 cups) lukewarm water
(Body temperature, NOT HOT WATER, it kills off the yeast!)
    20ml (4 teaspoons) salt
20ml (4 teaspoons) sugar .. we prefer 2 table spoons of treacle, or Honey
Mix dry ingredients thoroughly, add the water and oil. Ensure that all the dry ingredients
have been properly mixed through in a bowl use a spoon in the same direction and mix .. really well - if not mixed it comes out uneven. Place into the two breadpans that has been sprayed with anti stick .. be generous; Cook or smeared with butter. Sprinkle over with sesame, linseed, poppy seed, etc etera and press gently down with a dining fork.. we enjoy making patterns with the seeds
cover and Prove in warm area (we have it in the sun- but covered with a towel sitting on wine glasses - so no matter how high it rises the towel is safe) for 15-20 minute to the edge of the pan
Bake for 45-50 minutes at 180 deg Celsius.
Allow to “sweat“ in the bread pan for 2 minutes
Remove and place back into the oven for 10 minutes (oven off).
Remove and allow to cool off properly before slicing, ideally overnight..
Sliced thinly with a sharp knife or bread slicer, you can make the most amazing Melba toast
Place slices back in the oven pan at 180 deg Celsius, watch carefully and turn over occasionally
More treacle or honey lets the bread toast quicker when making toast or Melba
Too little sugar and the bread does not prove sufficiently.

Bread is easy once you learn that yeast is the one ingredient that dictates win or fail. Best practice is to mix your water, sugar ( honey) together first and use a thermometer to ensure you have a temp between 105 and 115. Add your yeast and wait for it to foam. If it doesn’t foam throw it out. If it foams you start adding your other ingredients.

  • @ronrea5197
    @ronrea5197 5 ปีที่แล้ว

Riley, just to make life easier for ya, You don't need to scale a fish if you cook it over a fire or pan fry it. That's of course you WANT to eat the skin. If not, keeping the scales on the fish prevents the fish from sticking to a frying pan. Life hack you'll use forever. Over a fire it does not matter. If you wish to bake it, some people prefer to scale fish first but really is not required unless you want to eat the skin. Some argue that removing the scales remove any bacteria caught between the scales, however if cooked correctly and if you are not eating the skin then it is not a concern. I have not scaled a fish in 30 years. Messy and waste of time! Also cooking with fish head attached adds flavor to the dish.

Naomi Klein is incredible! I'm currently reading/listening to her book "The Shock Doctrine" and she truly has a way of telling stories and making her point in an engaging way unlike any other nonfiction author I've read before. "This Changes Everything" is definitely on my list, as well as her other book "No Logo". She's just the kind of author that once you read one of her books, you want to read them all!
