Isn't humidity the bane of meringue? I was born and raised in central Florida, and we always had aunts who bring lemon or lime meringue pie, and the meringue was always rubbery.

My mom could make pies at the drop of a hat. Never needed a recipe, came out perfect every time. No need to measure anything. Nobody in my family has duplicated her crust. 😢.
