I found this video a few weeks back, tried it in a small batch, canned 3 pints of it. Two tweeks were made, as I like to remove the peeling of the larger ones after roasting and cooling, putting them in a bowl to puree with an immersion blender and adding them back into the rest; also skipped the onion(personal preference). Truly the best sauce we've had. My regret is making a small batch. Making more this week...probably a dozen pints. I kept hearing things in your delivery that felt familiar. When you mentioned a cooking supply store in Ellsworth, it made sense. We're in Rangeley. Best tomato season I've ever had. Your voice felt like home, at a time when kind neighbors are treasured. Looks delicious Dale, I think this winter will be a good year to have comfort food stocked up. Roasting is a great idea, it makes for a rich sauce. I really like the stainless steel pan, very nice kitchen accessory!
Thank you Craig. I was telling someone the other day that I haven't bought pickles or jam in a long time, it isn't that hard to make and it is so much better. I bought the pan to evaporate maple syrup but it has come in hands for many other things.
Love the videos Dale. I make sauce myself learned from my grandma. I actually don't put lemon juice or pressureize due to the fact that it should have quite a bit of acid in it already. My grandma always said there was no need to pressure can tomatoes as long as it was boiling when you bottled it. I haven't had any issues. Just thought I'd share that with you to save a little time. I'll core all my tomatoes add them in a big stock pot and simmer for an hr. Then I use a potato masher and then poor it into food mill to take out skins and seeds. I will usually cook it for a few more hrs after that to reduce then just bottle it cap it and it's done.. keep up the great videos looking forward to the winter cabin
Thank you Joey I have canned tomatoes just using the hot water bath before and it works well you just have to boil it for a longer period. I always add the lemon juice though just because the instructions say to. I don't think my mother ever canned tomatoes but she did lots of preserves and never owned a canner , I've eaten lots of it and I'm still here.
Dale Calder my mother in law came over one time last year and we were going to can tomatoes....but she said to get the jars lids and tomatoes reall hot pour em in the jar and put on lids and turn em unside down....period, she said that was all....well a day later some of the lids were not sealed so i had to redo them....i used the water bath and all cans then sealed, so personally i will always use a canner or pressure canner in the future !
I see you made this comment 4 years ago, so I do not know if you have gotten anyone to explain to you why you do need to add lemon juice, or citric acid to tomatoes now. Over the years tomatoes have been bred to have less acid in them. Even tomatoes with the same names, over the years have been changed. So the Early Girl, or Big Boy tomatoes you buy today are not the same as the Early Girl, or Big Boy tomatoes from even 5 years ago! If you pressure can tomatoes, you do not need to add more acid. But to water bath , you need high acid. Our food has drastically changed over the years, from the way food is being bred, from the soils, our water, even how fertilizers are made today. So our food may look the same, but it is not the same produce that our grandparents had!

My Grandma and my Mother always told me the cherry tomatoes do not have enough acid to prevent spoiling when you can them so by adding the lemon juice you assure the acid is higher. Thank you for this, I've canned my own tomato sauce ones before and this year picked up a couple flats at the local farmers market from an old coworker who now farms out at Manley Hot springs, I'll try your method this time. I've noticed the same issue with number of jars in the canner, it looks like you have the same one I do, I believe it might be that non-wide mouthed jars might be more slender.

My tomatoes have done really well this year, especially the cherry ones....I came to youtube looking for a recipe for sauce that I could can, have seen several that I liked, but yours fits the bill of our taste. I can't stand to see them go to waste after all the work of growing them . Still have quite a few ripening in the hoop house looks like I will be giving some to the neighbours.
He is ok and home now. I am as bad as him I got a bad cut yesterday got stabbed in the wrist with a scraper rummaging through a box.Funny thing is he gave me the same look I gave him lol .... Half inch to the left I might not have been here to tell the tale. What made it worse is I was half way through a course for driving telescopic loaders and forklifts. Theory yesterday and practical today. So I glued it with super glue and taped it. Finished and passed the course today ;-)
Be careful the superstitious say that bad things come in threes. LOL I know how you feel I often look down at my hand and there is blood running out of me and I have no idea how I did it.

Thank you . All of the canning recipes insist that you use bottled lemon juice because it is a standardized product and has a know amount of acid whereas lemons vary from lemon too lemon some are sweeter than others. So with bottled juice you know that you have added the right amount of acid.

I dont care I passed the tests so must have got over the bad luck. I said to my wife get a lottery ticket as the bad luck must change lol.

Hi Tressa yes tomatoes can be safely hot water bath canned add the lemon juice to increase the acidity and can for at least 45 minutes at a full boil.

Thank you. Yes I removed the peels several times it is easy to do you just turn it upside down and turn the crank backwards.

Even by conservative standards, you either need to add the lemon juice OR pressure can them but never do you need to do both...
True but much faster in the pressure canner and a lot safer.
