well u did the balut, get harry to have soup number 5 !!! i like the way u are more adventurous and think u will really enjoy the provinces and interactions there. the cities and malls are ok but theres something special drinking tuba and eating kinilaw and things amongst locals without the hotel comforts. as a brit getting used to using tabo and some things made it an immersive experience not just another hotel/holiday thing.

If you continued going down that area, you could find Muslim settlement in Manila. They sell food and goods from Mindanao, which is southern part of the Philippines. Really good halal food.

When you buy coconut in the Philippines you can request the seller to split the coconut after drinking the coconut water. Usually the seller can make you a coconut spoon so you can also eat the coconut meat.

it seems like Quiapo is your favorite destination to eat some street food huh? Binondo is more convenient to try such an adventure eating challenge. But if you have researched more, you should have visited Pateros, where BGC is more accessible instead of going there to Quiapo. Poblacion in Makati has a lot of vendors as well selling balut to many locals & foreigners alike visiting the place.
Balut soup literally tastes just like chicken broth and the yellow part tastes just like normal boiled egg. It's the embryo part where it gets tricky, some locals even skip that part when eating balut. Not me though lol.
