Vegan carrot cake recipe:
250g Plain Flour
1 tsp Baking Powder
1 tsp Baking Soda
1/2 tsp Salt
2 tsp Ground Cinnamon
1 tsp Ground Nutmeg
255g Grated Carrot
300g Brown Sugar
2 Flax Eggs (2 Tbsp Ground Flaxseed Meal with 6 Tbsp Water)
1/2 cup (120ml) Extra Virgin Olive Oil
Icing
450g Icing Sugar
3 Tbsp Vegan Butter
1 tsp Vanilla Extract
2 tsp Apple Cider Vinegar
1 tsp Vanilla Extract
1 Tbsp Apple Cider Vinegar
1 cup (100g) Chopped Walnuts (Optional)
