I think all professions have the same value of importance on this level to gain your lvl 40 mount. In my case, I have Blacksmithing and mining grinding in Arathi Highlands for Iron Ores and Heavy stones that worth 40-70silvers per stack, can also craft Green Iron Helms and Shoulders for mails, they do sell alot for 1gold and 50silver for ea craft. Having a Banker with Enchanting boost that extra gold farming too. Selling wands and Stange dust, Vision souls, are so profitable. This is the part were you stop killing monsters and just roam around and mining and chest hunting. It takes awhile but it was fun on my end.
I got my first level 40 mount with skinning by killing turtles (and later gorillas), vendoring the trash and selling the meat and the leathers. Didn't take long at all to grind my way up to 100 gold in between questing
Damn man being that you can get your mount at level 30 on TBC private servers I'd figure you'd have enough. I thankfully rolled a pally and got mine for free, but I did have enough gold at level 30. Selling bars instead of raw ore nets more profit. I've also found a lot of people posting things on the AH on this server lower than vendor value. Fishing is also very profitable especially if you are doing it while working from home or something.
I have no clue why you didn't want to level up "I would have to spend it on skills!" just... don't? You are not forced to spend your money the moment you level up. If you deny yourself experience you are just prolonguing the time you'll have to waste boringly grinding later
Just don't learn spells. When I was leveling my Rogue on Classic Vanilla, I just stopped leveling spells and my professions when I was like 37 or 38 and I had enough money for mount and riding when I got to level 40

managing the gold minigame in classic when you start in a new server is one of the most fun things the game has to offer in my opinion

Those turtles are great vendor trash even without skinning I've definitely farmed my mount on them in dust wallow marsh 4-5 times
