Oh how I envy you being able to bake homemade bread. Its the one thing I'm terrible at, I never seem to get it right, I try 3 or 4 days in a row, it turns out like a brick and I feed it to the birds. It usually takes me 3 - 4 weeks before I'm prepared to try it again. I think the problem is that my kitchen is too cold to get it to rise. I could certainly do with a few lessons lol. I like to make my Ragu from scratch every time, I usually batch cook it and freeze it. I use beef & pork mince, all the usual ingredients but I let it simmer on the stove for about 4 - 5 hours. If I don't want to open a bottle of red wine, I use Vermouth. The Rosso variety. We have a famouscook here, Nigella Lawson and she says its worthwhile keeping a bottle in the cupboard because unlike wine, it doesn't go sour. Sorry for the long message. I feel as though I know you and your family. xxx Oh forgot to say, when you get to the end of the parmesan cheese block, save the rind, I put mine in the freezer and next time I make bolognese sauce, I add one of the rinds, it flavours the meat. x
I absolutely LOVE Nigella Lawson! I'll have to pick up a bottle of Vermouth, I have a roasted chicken recipe that calls for it...I have a HUGE bag of rinds in the freezer for this exact purpose. Can't beat cheese rinds! I also put them in with my Italian Lentil soup, so tasty!!
Nigella Lawson is great, she cooks from the heart. I do wish you'd do a video dedicated to how to make bread. I'd be eternally grateful. I watch a few videos but I just love yours. You have such a relaxed way of cooking. xxx
