Thanks for sharing Mr. Russo. Everyone has their own method of cleaning & cooking the crab. But with the right technique of cleaning and cooking will make the crab tasty and very safe to eat. This is my method of cleaning and cooking the crab. I rinse all the crab while they are still alive with cool water to rid of the smells & the bacterias that are attached to the exterior of the crabs. I drown them with hot water from the facet only. I used a metal pot scrubber and scrubbing brush for cleaning the exteriors and the interiors of the crabs. Using a metal pot scrubber I scrub the exterior of the body and between the legs to remove the black color or anything that had attached to the body parts. Then I take apart the body and the shell. In this video Mr. Russo called those parts covering the two sections of the body lungs. I don't think they are the crab's lungs. I would removes all the "lungs" out. Next, I use the brush and brush the two sections of the body until it is white. Then, I use the metal scrubber and scrubs the legs on the top & edges until cleaned. Then I removes the stomach, the yellow stuff and fats out from the mid section of the body. And rinse the crab with cool water. After each crab is cleaned and rinsed I place them in a strainer and place the crab upside down to drain off the water. When done cleaning and rinsing them I placed the crab one by one onto the steam rack with the body up to prevent the juice of the crabs from draining off while steaming. I stack them so that not much of the steam water would stay in the body. I steam them for 10 minutes on high heat. You have to steam the crabs until you see Orange color on all the legs. If you UNDER steamed the crab, the flesh are not pack, not firmed, and the taste will be fishy & watery. When steamed PAST 10 minutes will make the flesh not pack and firmed. And the texture of the flesh will be soft. When steamed right, the flesh will be packed with meat, the texture will be tendered, and the taste is creamy & sweet. Never boil or bake the crabs. And never cook the crabs without first washing and removing the unwanted parts.
Thanks for that detailed description. I've settled on doing something similar because my family doesn't want to deal with the guts and gills. I rinse with a hose while still alive (the crabs snap at the water stream) and then cover with ice for 30 minutes before removing the top shell and guts, etc. (I blast the guts out with a hose.) I never tried cleaning them with a brush and will consider next time. I steam them for 20 minutes so maybe I am overcooking. Do you start your 10-minute timer after the water comes back to a strong boil (which takes 2.5 minutes with my setup). What do you use for boiling liquid? Just water? Thanks again.

I am from North Beach and Chesapeake Beach, Maryland. We steam our crabs with beer and Old Bay. After they are cooked we dip them in apple cider vinager with a little Old Bay in that. My mouth waters as I type!!! Used to eat crabs at a place called Swedens Point Marina, Maryland or Indian Head, Md. Popes Creek also. Miss those days.

Just pull of the lungs and if you don't want to eat the mustard just take a spoon and remove it. Pull the legs off first. You will get so much more meat if you pull of the legs then pop the apron, then pull off the top shell and remove or eat the mustard/ guts and bust it in half then dig out the meat from each little slot that connects to the legs.

The doctors couldn't figure out what was happening at first but was later found that he had paralytic shellfish poisoning that he got from eating crab mustard. We catch crabs right off our deck and I clean them out. The guts contains toxins and carcinogens. I don't know why anyone in their right mind would eat that stuff. And just because someone didn't get sick doesn't mean you won't. All it takes is one crab to put you in the hospital.

I have never seen anyone fiddle around so much on a crab. I have seen many videos on eating crab,non was so picky as yours. Maby there was a perpose behind it but rest assured,If I am eating a crab,thats the LAST way I would do it. Mabe you are harvesting the meat for a pie? IDK some recipes call for lump crab meat but I wouldnt throw the rest away or make a receipt that was that particular about cleaning the crab. seems like crab is ment to eat as a finger food anyways.

From Jane on down I chose to ignore the idiots, they obviously did not spend enough time learning comprehension in school to understand my post. I live on the gulf. I catch and eat enough blue crab to know a cooked crab when I see one. To the haters...why don't you find something better to do than attack me!
I attacked no one. I made a statement about being humane to the crabs in essence by chilling them before cooking, from that one statement others were calling me a dummy. I never responded either way in my own defense until today. I wanted to thank the one who tried to clear it up. Still others preferred to take the negative side. Some people are idiots my feelings stand on that issue, but I have better things to do than beat a dead horse. Blast away again, I'm sure you will, but I won't see nor read it. Have a nice day.
Diane Terrizzi I wouldn't go so far as to call you names, but you clearly didn't understand that the crabs were already DEAD when he did that. On top of that - who cares? 1. It's a crab. 2. We eat them. 3. I'm pretty sure that if they could tell us how they prefer to die at our hands ( or the hands of other crabs, fish, etc. ) they'd say that it really doesn't matter. Being eaten is being eaten. PS - just so you know, crabs can't talk.
if you live in Md you know how to cook/steam and eat a crab and this is not the way!!!
You forgot to clean it out before cooking and you pulled the legs off without cracking off the body segments off at the same time. Totally totally wrong not like a pro at all !

I have never seen anyone fiddle around so much on a crab. I have seen many videos on eating crab,non was so picky as yours. Maby there was a perpose behind it but rest assured,If I am eating a crab,thats the LAST way I would do it. Mabe you are harvesting the meat for a pie? IDK some recipes call for lump crab meat but I wouldnt throw the rest away or make a receipt that was that particular about cleaning the crab. seems like crab is ment to eat as a finger food anyways.
1st off you pick with your hands.
2nd, you EAT THE MUSTARD! NOT scrape it out and discard.
3rd, no die hard crab pickers rinse them off-that's sort of sac religious. 4th, I'll pick a whole crab in 2 minutes flat, not 5. I can do it blindfolded. BTW- blue crabs are like GOLD! My hands down favorite food ever! I'll NEVER get tired of them! Now I'm hungry...
