FARMHOUSE CHEDDAR
*heat 6 gallons of raw milk to 90°
*add 1 cup backslash whey or 3/4 tsp meso culture
*ripen 1 hour
*add 3/4tsp animal renet dissolved in 1/4 cup water
*allow to rest 1 hour
*cut curds into 1/2 inch cubes
*allow to rest 5 mins
*stir while heating to 100° for 30-45 mins taking the whole time to raise the temp slowly
*allow curds to settle for 30 mins
*strain curds through a cheesecloth lined colander
*hang to drain 1 hour
*break up curds to marble size and mix with 3 tablespoons sea salt
*press with firm pressure 1 hour
*flip and press with firm pressure overnight
*air dry 2-3 days on the counter
* vacum seal and age in the fridge or wine fridge (1 month)

I found your video today as I am only beginning my cheese making journey and probably next week (after Christmas) I will have gathered or made all the equipment and ingredients needed to make my first cheese and I think a farmhouse cheddar may be my first attempt. I loved the video and your little helper. My little helpers are in their early 20s these days and out doing their own things, but I remember.

Your welcome! It really helps to bring the overall cost down when you can keep the meso cultures going longer. They aren't the cheapest thing.

can you age the cheese covered with cloth in the cupboard for a month or must it age in the fridge?
I only have experience with vaccum sealing and then storing in the fridge. In my location it would be to warm in a cupboard, 55° would be ideal
Great video tutorial! Can you use backsplash whey from making mozzarella? I have only made Paneer and Mozzarella. Trying to work up to Farmhouse cheddar! I don't have a press yet!
So thanks for watching! You can only use that whey if you cultured within actual culture, not an acid. Most mozzarella recipes just add acid, and paneer is the same. You need to buy mesophilic culture to start, then save that whey to culture another cheese. Hope you make that farmhouse soon. 😊 I'd love to know how it turns out.

Do you leave the heat on when pouring in the backsplash or do you shut it off ?? And if you can’t get raw milk can you use regular milk??
Turn your heat off before adding the backsplash whey. I have never used anything but raw milk but I am sure you can do it with regular milk. Be sure your milk is not ultra-pasturiezed and you may need to add calcium chloride. You would stick to the ratios in the cheesebook that I recommend. 😊
How long does backsplash whey last? Can I keep it in the fridge for 2 weeks? Or does it work still if I freeze it? I didnt make cheese everyday, but every two weeks to a month. I'd love to save on buying cultures!! But I'm not sure if my backsplash whey will still be good. Thank you!
I would go ahead and freeze it. Two weeks is getting close to when it starts smelling off. If you freeze in 1/2 cup increments, it makes it nice to thaw just what you need.

As long as it was cultured with a meso culture it should work just fine to save that whey.

I am sorry 😞 I was very new when I made this video. It only has music the first 2 minutes or so. My newer cheesemaking videos do not have any music. If you have any questions let me know I would love to help you make cheese.
