    Hello Mary, Im an Oregonian who's originally born in Tx! I was raised by women whom didn't have as much skill and knowledge as you do in the kitchen. So naturally I was lost in the kitchen as well. I basically wanted to just thank you for helping me be a better father and cook. Our stores are filled with trash and your channel has helped me make sense of what to actually do in the kitchen. Real foods heal people. One last confession. Ive taken to calling you "Grandma" thru the phone. Lol! Something about you makes me feel like home. Thank you again. Bless you and your family. ☮🤙🏾

    I just made my first loaf! My starter dough was 48 hours old. I did a sandwich bread in a loaf pan. Perfect crumb. Fantastic taste! It came out beautifully. In a couple of days I’ll do my second one. It makes the bread making process SO simple. In the interest of full disclosure I used my sourdough starter instead of commercial yeast. But let’s see if this works over time to produce ready dough every couple of days.

    This is wonderful! I've been thinking that people were making bread when they were going out west in wagons so they really didn't have the time or ability to do all that feeding, discarding etc. that is often recommended. From what I read they had a sourdough wooden bowl and even left over bit of bread went into it and became a part of the starter.

    Mary, it worked. It took a few tries and several months. My last attempt, after adding the 3 cups to the 1/2 cup of dough, I added a yeast, the next batch I halved the yeast, and so on. the last addition of yeast was a pinch, and ever since then, it rises on its own. And after a couple of months of that not adding yeast to the 1/2 cup, it's starting to get that sour dough smell. Really cool. I let it sit in the fridge for the week and bake on Sundays.
    The one other thing I do that is not in your instructions, is I use my stand mixer, it's so much easier than the spoon handle.
    So thanks for this recipe - really cool and so simple.

    I'd been having problems making a great loaf of sourdough out of my stepsons sourdough starter (he's a CHEF) until I found YOU! I used one cup of his starter, then added 1 cup of sifted Einkorn flour, 2 cups of all purpose flour, the salt, sugar and water and put it in a 3 L jar in the fridge for 2 days. I wish I could show you the pic of the starter. It was amazing! Bubbles all over! I scooped out the dough, leaving some of course, and added about 1/2 cup sunflower seeds to the dough as I worked it into an oblong shape for my bread pan. Hubby like to make sandwiches so I used a 9.5 x 5.25 pan and it's perfect! It rose beautifully and so much that some of the pumpkin seeds I put on top, fell down the sides, lol. It's so delicious I don't think I'll ever mess around with just starter again! This is perfect dough for rolls and bread, but what should I add if I want to use it for pancakes, anything?

    I’ve learned so much about making bread between you and artesian bread with Steve. You take the mystery out of bread making. I am now trying to bake bread with the sourdough starter method. I have made the bread that you’re talking about today. I believe it was a King Arthur recipe. I may go back to that but I want to try the old fashion starter method. Thank you for all your great tips! God bless you and your sweet family.❤

    Mary, this video has been out a while, so I don't know if you're looking at comments anymore. I just put my first batch in the frig. I'm so grateful to you because I had just about given up on sourdough. Despite following all directions and different people's methods, my loaves were getting worse not better!
    I saw someone in the comments was going to put some of their refrigerated starter in instead of yeast.
    I've decided to start with the yeast but after that I'm going to add a tsp of my starter to the mix. I don't want to waste it and I don't think a tsp will contaminate it if the starter is not up to par.
    Anyway, so many of us want sourdough for health but even experienced cooks need new ideas. Thank you for all you do. 🥖

    G'day from Smithfield,
    South Australia
    I have always been taught that if you are using aluminium foil that to get heat into your bread/food you place it shiney side down because you get the heat without a burn. if you want to cook it quickly place the shiney side up. I hope that it helps. I love watching your videos and the way you explain everything. Thank you sweetheart and God bless you and please stay safe, healthy and happy ❤ 👍🤗🙏🌹🦘

    I made my first batch of dough on Sunday and baked a loaf in my bread machine on Tuesday afternoon. Tasted great and the texture was like English muffins. My bread machine is an Oster. I looked up the bake temperature: 266 degrees F. The top didn't brown but the sides and bottom looked fine. Can't wait to see how the next loaf comes out. I think I'll try adding whole grain flour slowly at each refresh. I saw on your website where it said to use at least 1 cup of bread or white flour. Thanks for the advice on that.

    Okay. First thing is I have to say YOU ARE SO RIGHT. Lol. The 2 loaf I got ready I completely forgot to let sit.🤣🤣 I just threw it in the oven and it turned out GREAT!
    I just got the next loaf ready and it’s in a warm place to rise.🤣🤣🤣 This dough is more than forgiving. It really doesn’t matter how bad you mess up it WORKS. THANK YOU SO MUCH!!! My 70 yr old mother loves it.

    I am just now getting into sourdough bread making and fermenting foods. I guess I am late in the game. I homeschooled 7 children, but was always so overwhelmed with taking care of the kids, so I never tried any of this. It's never too late to get started, so I appreciate this video. I have a container in the fridge now. I can't wait to have a kitchen full of grandchildren learning the art of sourdough bread making. Thank you for the awesome video. FWIW- back in the day of raising babies, the internet just wasn't like it is today. lol. That explains a lot.

    I love watching your videos, Mary, here in the UK! I tried a couple of times to make a sourdough starter but it didn't really work well. One of the problems for me is that I understand you are supposed to keep it cool to start with but then bring it out into a warmer place, and we don't have anywhere that's permanently warm. So I watched this video and have now successfully made two loaves using your method, first one with white spelt flour and then a wholegrain spelt one. My husband was very complimentary about the second one! He's my best judge.... I have now got the next batch of dough in the fridge and can't wait to make another loaf. You are truly an inspirational teacher!

    Make and use your first starter with one sugar cube - scrape out what you need and put the scraped out jar in the fridge. Leave it there until needed again. Pull it out, feed in your proportions needed for next loaf plus one sugar cube - rinse and repeat. No need to keep it alive on your counter. Just put it in stasis between uses.

    • @ColleenScatena69
      @ColleenScatena69 2 ปีที่แล้ว

      Can you explain more.

    • @cgirl111
      @cgirl111 2 ปีที่แล้ว

      @@ColleenScatena69 Just get your first starter going with daily feedings the usual way. After using just put whatever is left in the jar in the fridge. When you need it again just feed it the amount of flour and water you will need to bake and leave on the counter. After use put the jar back in the fridge. The scrapings left in the jar will reactivate your new additions then go dormant in the fridge.

    • @JDB2552
      @JDB2552 ปีที่แล้ว

      When you say rinse and repeat, I’m sure you’re just using a shampoo metaphor. You don’t actually want to rinse out the jar in order not to lose that yeast and bacteria culture you’ve been developing, correct?

    Loved the video!! I was wondering if you had updated links to the progression of the first 2 batches for the follow up? I'm curious to see how long you can keep it going, and if it gets better with time, or just stops funtioning. It would also be interesting to see if you could countertop that method without refrigeration. I'm wondering how pioneers did this back in the day, when refrigeration was not available. Keep up the great work, you are a wonderful instructor!

    • @lizziel4876
      @lizziel4876 ปีที่แล้ว +2

      I have just made my second loaf using this method. The first time I used white spelt flour, and then I refreshed it with wholegrain spelt. When I looked at in the fridge I thought maybe I shouldn't have used all wholegrain yet, as it didn't seem to be bubbling like it did the first time (I'd also fastened the top of the container completely by mistake, rather than doing as Mary says and leaving it open slightly) so I left it out in the unheated (at night anyway) kitchen overnight. In the morning it was definitely more bubbly. The kitchen was heated after that, but not all that warm, and I made a loaf in the afternoon, which turned out very good! Like you, I'd been wondering what would happen if I just left it out in the kitchen all the time. Like Mary, I'll experiment!

I put a small bowl of water in the oven and baked it at 450F. for 30 minutes. It turned out delicious with a great texture and crispy crust. I was happy to find that it stayed fresh on the counter for 3 days!

    For consistent perfection every time (particularly for Pullman pan breads which bake unseen and unlike Dutch oven breads aren't so easy to test and put back if needs to bake longer even for experienced bakers ... for making the switch to high altitude baking if relocate/move and still dealing with plugged ears (or hard of hearing or deaf) ... and especially for new beginner bakers not yet comfortable with the thump/hollow sound method .... 190 F on food thermometer with tip inserted into center works for any type of bread loaf to ensure no longer raw/under-baked (no big deal if goes 10 to 15 or even 20 F degrees over) ... then do thump/hallow sound test to get used to and learn how it should sound so will know how to test without thermometer.

    🙋🏻‍♀️Hello Mary, I’ve always wanted to learn how to bake sourdough bread. But never knew how. I watched your first video on the one your mother taught you. Wow! How very smart and patient it was back then. Then I saw this other video a busy mother’s baking sourdough and for me I was so surprised on How many times you can repeat the same process and get better and better results each time. I love sourdough bread and I’m thankful that you are So knowledgeable and kindness especially patient on explaining every step ingredients and So very informative information. You have a beautiful day. Really enjoyed and appreciate all your videos. Can’t wait to start baking my Sourdough Bread Thank You, Mary many ✨✨blessings 🙏🏽👩🏼‍🍳🥰🍞

    I love your work my friend and I've only just discovered your videos , my eldest daughter and I practice HomeKitchen cooking from 250 miles apart now that she's married with kids ,we do everything from Sauerkraut and all the pickling and canning to apple cider vinegar and the mother, we both struggled with trad sourdough starters and loaf difficulties until we found the 1/4 tsp yeast no knead breads ,we tried many variations and had considered exactly what you've accomplished here , this will be our new mission, thanks so much for sharing ,you have two new fans from down under ,cheers big ears

    What I do to give my bread a slight sour taste is to do an overnight bread with a good heaping tablespoon of greek yogurt.....and boy, does the yeast love that! I have been doing that for years.. and have never ever tried my hand at a sourdough starter until a few days ago.. so we shall see!

    Hi Mary , I honestly thank you for bringing this recipe/ method of sourdough, I have been using this same starter for over a year now and its fantastic!!!! I have made a few changes which might help others
    1 ) I made the dough quite a bit more loose but not runny
    2) I pour it into a loaf tin with a silicone liner
    3) I’ve used mainly wholemeal flour
    4) instead of white sugar I blend four large dates in hot water so it’s like syrupy, let that cool and use a good table spoon and fridge the rest for another batch,
    I use 4 cups of flour which gives me a lovely 1kg loaf
    God bless you ❤

    I can remember reading in my Little House on the Prairie books as a child, Ma Ingalls always making sure that they put all the left over bits of dough in the jar with the dough starter so they'd have more starter for bread. This would be logical given that they would not have had access to yeast regularly.

    I used to bake a lot of bread and they used to call the host a "mother"or a "biga." It does get tangy, but it's not true sourdough like with a starter. It is good, though. I live in Houston where it's so humid and hot that it sometimes kills my sourdough starter, I may go back to making the biga. Thank you for the reminder of this bread!

    1). I don’t bake bread every few days. I bake once every month. What should I do with the dough in the fridge? Can I freeze it.?
    2). Will salt kill the yeast in the dough? Even tho it’s just a little bit.
    Thanks.

    Hi, Mary. I love watching your channel! My sister has been making sour dough breads and has encouraged me to try it. Well, I have started a “starter.” I’m currently on day 4. It’s bubbling, but hasn’t risen or doubled in size as yet. I’m trying this because both my husband and 44 year old son are diabetic and I’ve read that sour dough breads do not react with blood sugar as severely as regular bread. Your method shown here is very intriguing. I may do this instead of feeding and discarding every 12 hours. I hate wasting foods.

    Mary, You are great!!! I so enjoy watching another bread baker sharing your bread baking skills. Will you make a printable recipe for this Busy Mother's Sour Dough Bread?
    I home schooled my son, too. He's 28 now. Did you ever make a starter from red grapes? Around 10 years ago, I tried it twice. The first time didn't work. But, the second did. And it was fabulous...oh, and sour dough pancakes!!! The best. I'm older now and don't feel like going through all of that, so this busy mother's recipe is perfect for me. I would prefer to print it though. You give great details and I'd rather print than write in my horrible handwriting. Thank you, God Bless You!

      Hi Lynda, if you open the description under the video, you will see a link that will take you directly to the corresponding blog post and the printable recipe with the instructions. It’s all over on my website: MarysNest DOT com. Yes, I have made starter with grapes. It worked really well but my dough had a purpleish color to it! LOL! I am thinking of experimenting and trying it with green grapes another time. I think that might put less color in the dough. So nice to chat with another homeschool mom. My son is in his 20s too!

    I have had zero success with making sourdough starter. I think I’ll try one more time. However I was at the grocery store the other day and in the yeast section I found a packet called instant sourdough and it says yeast and sourdough culture. They cost $.81 and I thought what the heck I’ll give that a try. I haven’t done it yet but that would be the easiest thing ever lol but I will try this other method. I was watching a lady and I can’t remember her name now, and she had a recipe similar to what you’re using there only it’s called master bread. It can stay in your refrigerator up to 14 days. It has 6 cups of flour to let you know the quantity. When you’re ready to bake bread you just pull out what you need and make it. I’ve used it a couple of times including cinnamon rolls and it turned out fantastic.

      I just made another loaf and used poppy seeds on top. This is a delicious bread also. I was making my batter ( dough ) too wet and pouring it out on surface, it was too runny. I’ve added less water in my proof fed container. I think this might work for me. I’m in humid Florida therefore I might not need as much water all the time. But this recipe works beautiful. Next I’m trying your sandwich breads. I’ll let you know how that works out.

    Mary, this was wonderful! I can't wait to give this sour dough a try! It's hard to believe bread this easy, could taste so good! I just bought 10 pounds of all purpose flour so it will take me a while to get through, but I want to try other flours as well. Errr... just not whole wheat.
    Thank you for showing us Covid Bakers how to manage, when so little store bought yeast is available. Please thank
    your friend for her experiment, and passing this great lesson onto you.
    BTW, not only could I not buy yeast, I couldn't get shortening, dates or raisins. Canada eh? Sooooooo I made apple water yeast that has been brewing for 3 days. It is fizzing, just like it should! Tomorrow I am making my very first loaf of bread, just the way you made it here!!!!! Grandma would be envious!
    p.s. I found a great recipe for pie crust, using only oil and milk right here on youtube. It made a great cinnamon roll twice!
    x0x!
    pps I don't know why my comment shows up the way it does when saved. It was in perfect form when I typed it.

    Love this method. Yes, my sourdough comes out flat, so I’ve been frustrated with it and wanted to go back to the 5-minute a day bread, as that always worked out - but I still can’t find yeast anywhere. So, I’m going to try this method, but just incorporate my sourdough starter into the mix instead of adding yeast. That should work too. I’ll let you know. 😊

    Hi Mary, the process of holding back a bit of the mix and using it for the next time it's a very old process of making bread still to this day in Portugal, thank you for sharing it with us.

    Hello Mary:). I have a question: How long is too long to leave the first time dough in the fridge before using it? I was so busy doing yard work and trimming & removing some trees, and hanging out with my kids and 2 year old Granddaughter that I totally forgot!
    “How long” you ask.... Then I tell you 13 days (lol). Perhaps I should pitch it and start a new one?!? So grateful to have this busy Mom’s recipe! My 3 kids are grown and gone now- but they frequently come to visit❤️ So yes, I qualify as a busy Mom (and Grammy:) and they love my cooking. Thank You Mary... You’re a Sweetheart and I appreciate your videos and recipes So much! God Bless You❤️🙏🏻❤️
