  • Aalu Bhary Mirchi k Pakode By Delicious Storm
    4 medium-sized potatoes, boiled, peeled, and mash
    1 pao green chilli
    1 teaspoon cumin seeds
    1 teaspoon coriander powder
    1/2 teaspoon turmeric powder
    1/2 teaspoon garam masala
    Salt to taste
    Fresh coriander leaves, chopped
    Oil for frying
    For the batter:
    1 cup chickpea flour (besan)
    1/4 teaspoon turmeric powder
    1/2 teaspoon red chili powder
    A pinch of asafoetida (hing)
    Salt to taste
    Water, as needed
    Instructions:
    Heat some oil in a pan and add cumin seeds. Once they splutter, add ginger-garlic paste and sauté for a minute.
    Add chopped green chilies and sauté for another minute.
    Add mashed potatoes, coriander powder, turmeric powder, garam masala, salt, and chopped coriander leaves. Mix well and cook for 2-3 minutes. Remove from heat and let the mixture cool down.
    Meanwhile, prepare the batter by mixing chickpea flour, turmeric powder, red chili powder, asafoetida, and salt in a bowl. Gradually add water and whisk until you get a smooth, thick batter.
    Slit the green chilies lengthwise, remove the seeds, and stuff them with the prepared potato mixture.
    Heat oil in a deep frying pan over medium heat.
    Dip each stuffed chili into the batter, ensuring it is evenly coated.
    Carefully drop the coated chilies into the hot oil and fry until they turn golden brown and crispy.
    Remove the pakoras using a slotted spoon and drain excess oil on paper towels.
    Serve hot with green chutney, tamarind chutney, or ketchup.
