Colonia Caroya is a city in the province of Córdoba, north of its capital city that bears the same name as the province, approximately 50 kilometers away. Well known for its salami from Carole, which preserve ancient and apparently secret recipes, with a production of more than 300 thousand kilos a year by few producers. This city was created at the initiative of the then President Nicolás Avellaneda who used to visit the area, helped organize the irrigation of the farms and promoted the arrival of Friulian immigrants, from northern Italy, to the border with Austria.
These immigrants arrived on March 15, 1878 and that is the date that is considered the founding of the Colony. At first they were housed in the Jesuit Estancia de Colonia Caroya, which is very similar to the one located in Jesús María, a few kilometers away, but immediately these entrepreneurs began to organize the current city in the vicinity of the farm.
It is important to note that Colonia Caroya not only stands out for its salami, but it also has wine production, the most important wineries being three: La Caroyense, Nanini and Campana.
As tourist activities, you can visit the Jesuit farms of Caroya and Jesús María, the wine route and the Casa Copetti Museum, with an exhibition on the life of the first settlers. Every year the provincial festival of the grape harvest, the festival of typical foods, the festival of fruit and vegetable growing after the harvest is held.
