    Nice job! I've been sugaring for about 30 years and it's a great family activity and there is nothing like small batch, homemade maple syrup!

      Thanks! We've been only doing it for a couple of years, and it gets better every year. Somehow I made all of last years batch a little heavy so it's crystallizing in the bottom of the jars/bottles. New hydrometer this year, along with a better understanding of how to use it should get that fixed. We're tapping this weekend! Hope you have a great season!

    I cook maple syrup every year and I cook mine down till it is the color of root beer and it taste awesome. And I keep mine in a refrigerator at a temp around freezing. and it last forever I cook up about 3 gal. every year. I also have 4 beehives and I do not filter it and it last forever.

    I think you answered all the questions I had. now to rig up an inexpensive way to make my syrup. propane is really expensive lately (march 2022). we have wood, but I fear I'll goof up making a cinderblock evaporator. I don't have handles on my buffet pans which would have been nice.
    where do you find the app you used to determine the right temp? does it require some type of apparatus that reads temperature or does it base the local boiling point of water thru the forecast? I am familiar with pressure altitudes using a altimeter. but don't have one handy. (one in my plane)

      Add in the labor cost of cutting and stacking wood and the hours upon hours of cooking, I'm charging $300/pint!

      It's just guesswork, but primarily move a couple scoops every couple of minutes. The idea is to keep boiling, and never let those pans run dry! You don't want to flood all your pans with cold raw sap, so moving it from one pan to the next ensures you always have boil going on in most your pans.
