You're the perfect modern chef. Not snobby, not overly fancy, not attempting to mystify cooking. You get in there and squish eggs with your bare hands, and drop mad science while you do it. 10/10
Me listening to Kenji’s egg talk right after watching his hard boiled egg video where he gave the same talk but not caring because its just as interesting the second time
I love the tactile feel of using my hands whether in the garden or recipes like this including salads. It just has all the feels of completion done right.
but if he just licked his hand, he couldn't go back to hand-stir if it wasn't already how he wanted it (and he did wind up tweaking it and mixing again).
Yeah, but I'm not just watching _some guy_ make an egg salad sandwich, I'm watching a guy who tested and documented egg boiling techniques with hundreds of volunteers and double-blind research studies!
He might have done all the research, and taught you and many others on the job, but he didn’t teach it in THIS vid. The only think he taught was to start the cooking in hot water instead of cold. What about the rest? I want to know how you can get them to the right doneness (overcooking makes a green yolk ring- so how long to boil?) And how do you peel, say, a dozen eggs, not just 1-2, without the shells getting difficult to peel without damaging the cosmetics of the egg if you are making something like halved eggs for a Cobb salad or for deviled eggs? He left out the important stuff.
I've been following your work for years. It's wild when you do a new video that re-teaches something that you figured out a long time ago. I've been starting my hard boiled eggs in boiling water for so long, I had forgotten that I learned it from you.
Kenji I just wanted to say I have made probably 10 of your recipes for my family and friends and they have all been amazing and made people so happy! Thank you so much for making content that brings people together you are a legend!
well your god damn right i spent 10 minutes watching a legend make egg salad, honestly I've never made it exactly the way you did and you always have the best way
i actually was trying to make egg salad a few weeks ago and the first thing i did was search this channel for a recipe but couldnt find one, papa Kenji always blesses you when you really need it.
what I appreciate the most about your cooking videos, Kenji, is how positive you are in people doing things differently and trying out different things to taste
This might be extra, but I’ve found I really enjoy scooping out the yolks and making sort of a dressing with them, Mayo, mustard and some gojuchang, and mixing the hell out of it. I then chop the whites and whatever mix ins and gently mix them with the dressing. Seems like it creates a little bit more of a textual contrast. It’s egg salad tho so it’s always going to be good!
I cooked at a retirement place in the south US. One woman there would stop you in the hall and tell you how you had gone astray putting onions in egg salad. Very opinionated and micu more simple with the older recipes lol
You're the only person, that I know of, that would have me watching make an egg salad sandwich. Most of your videos have a little nugget that I didn't know. This time it's stream/boil method. My favorite though is the back draw of a knife while slicing. Did it tonight while mincing garlic! Thanks for these videos.
Dang, Kenji's got the wholesomeness dialed to 11 in this video. On the off chance you see this Kenji, I really love and appreciate all you do here on youtube. I always learn something new when I watch one of your videos.
Hey man, I didn't just spend 10 min of my tuesday watching someone make an egg salad, I spent 10 min of my tuesday relaxing, learning, and getting very hungry for egg salad, keep up the great work.
Hello Kenji, I always watch your videos when I need to relax. Something about your video screams relaxation idk why also what do you think about cutting pickles lengthwise for burgers?
I agree with Jack and have said it before. I love to watch Kenji for his recipes, but I also watch for the relaxation. I appreciate his knowledge and the way he teaches not only the recipes but the utensils he uses and why. I also wanted to point out that I like the painted toenails today Kenji. I am sure I know who did that artwork and it makes me appreciate what a great dad you are!!!
I personally can’t stand a pickle on a hot burger. I love a cold pickle spear served on the side, but hate them warm on a burger. I feel like the odd man out because everyone loves them on burgers. I just don’t get it 😩
Today is Tuesday and I'm happy I found this video. Kenji's videos are always fun and informative. But hey...Kenji saying "Did you think you'd be spending 10 minutes of your Tuesday watching someone make an egg salad sandwich?..." creeped the sh*t out of me.
This is my favorite egg salad recipe. I use Japanese yuzu flavored kewpie and I can’t go back to using regular kewpie. Also, instead of using my hands, I pass the eggs through a cooling rack. I recommend this method if you don’t want to get your hands dirty! Thanks for the recipe! I never get tired of it.
Hey Kenji! I used to work at a local sandwich store and boiled dozens of eggs every day to make our egg salad. Your method is definitely the best in my personal experience, so if you're reading this, Kenji is right! Don't start your boiled eggs in cold water people!
Your egg salad looks delicious. I can't believe I actually learned to use my hands to mix egg salad. I'm going to do this the next time I make it. Thank you Kenji. ❤️
To answer your question Kenji, I was hoping I would spend 10 minutes of my Tuesday watching you make an egg salad sandwich on the internet! I couldn’t say for sure I would be doing that though since I didn’t know if you were gonna upload this video so soon after the how to boil an egg video!
Kenji, I can't tell you how happy I am about your hard-boiled egg method. Seriously life-changing for me! I've actually won bets with 30 year professional chefs about what is the superior method to boil an egg that peels easily. Your "start in boiling water and then immediately into an ice bath" wins every time. It even works well with the freshest eggs that you can get, not from the grocery store, fresh laid from people who keep chickens, or as we call them in Louisiana, "yard eggs". Thanks for everything you do my friend!
I had zero intention on watching a video like this when I woke up today because I had no idea what egg salad was. I’m glad I’ve watched it and learnt something new.
I was as surprised that you mixed the egg salad with your hand as I was when you smooshed the mushrooms for soup with your hand! Once I ordered an egg salad sandwich at a deli, and thought crisp bacon would be a good addition. The whole time I was eating it I thought "egg shells, egg shells, egg shells."
Brings a whole new meaning to ‘hand mixer’! I WAS expecting the knife. I WAS NOT expecting the hand. 😀 Oh, and I actually highly recommend watching someone make an egg salad sandwich…especially on a Tuesday! Love it, Kenji!

Rainbow toes! Kenji, you are my go to for cooking advice! I know you use puns sparingly but was kinda hoping for at least for one during this vid. Your egg salad looks dillecious.
Well, after watching this video I immediately got up and hard boiled eggs and made this egg salad. Best egg salad ever. We did add some of the pickled red onions we always have on hand now thanks your recipe and holy cow was that a great addition.
To put it simply yeah. But to be fair there are some people that swear by methods such as salting water, freezing your eggs, starting from cold water, sacrificing a virgin to baphomet. You know, totally normal boiled egg things.
It's a little bit more detailed than that, he explains it more thoroughly in his video dedicated to the technique. Yes it's just boiling them, but also he starts out with hot water and rather than doing a deep boil like most of us at home probably are used to doing he seems to do a boil/steam which he says hardens the whites before they fuse to the shell, something that happens frequently if you start with cold water. So it's a bit more nuanced than it might seem, even if only slightly.
As soon as I saw this video was up I was filled with joy that I had an egg salad video from you to brighten up my Tuesday. Also count me in with team DILL
Hey Kenji, This looks amazing. It reminds me of the egg sandwich my dad used to make. But except for mayo and cleary, He added boiled potatoes. So it's basically boiled potatoes, boiled eggs, salt & pepper mashed and all that on a buttered bread. Simple recipe, give it a try.
Very pleasing looking anytime of day sandwich Kenji! As I had enjoyed a Monday lesson of boiling eggs for sandwich potential, seems only natural to sit for about 10 minutes on a Tuesday evening and enjoy a masterful creation of a delicious egg salad sandwich! -Bob...
I feel you. It's no longer funemployed, it's get me out of bed before my brain melts. Plus the depression from a year and a half of being rejected from jobs is making it that watching somebody happily make and eat an egg salad sandwich is uplifting.
I did not expect to spend 10 minutes of my Tuesday watching someone make an egg salad sandwich. However this is exactly what I've done and I don't regret it.

Also I switched to a vegetable cleaver to do this a couple years ago, and now I can use both knives depending on how I feel. You are amazing!! Keep up the awesome work posting thoughtful information packed videos, love you and your channel!
He literally has it all over his hands yet still gets a separate spoon to taste it lol. Surely I'm not the only one who would just suck it off their fingers.
I guess it is to avoid double dipping? He probably doesn’t want to lick his fingers, add the salt and olive oil, and then put his freshly licked fingers back in the salad.
I was one of your egg peelers at Wursthall! Love seeing that data turned into practice.
Look man, how else am I gonna spend 10 minutes on a Tuesday both entertained and informed? Cooking tutorials are a balm for the soul.

After spending the last year of my life finding new ways to use that homemade mayo I can't believe I never thought of this
I don't know why, but I love this comment. This is me with so many homemade or random specialty condiments.
My condolences 🙏🙏
I bought shopping-mall sushi... and used it to basically convey the mayo into my mouth.
After u take the shell off the egg
Rinse the egg under water for small fragments that can go into the salad
