This is the cashier (checkout operator) training video for the new Datalogic 9800i scanner/scale that has recently been released to market in Australia.

Why does the cashier have to stand? That’s not very comfortable and also isn’t realistic. Can they also sit like usual?

Standing is very realistic in the U.S. I've worked retail since the '80s and I've never worked in a store that allowed cashiers to sit. I've never thought much about it, but I believe the main reason is that it is viewed as being 'lazy'; that you should care enough about the customer to serve them standing. I would also imagine it would be more difficult for the cashier to bag the items if they were sitting.
