Cheesy Corned Beef Lumpiang Shanghai

    INGREDIENTS
    2 cans (175 grams) of corned beef
    Lumpia wrappers
    1 small carrot (finely chopped)
    1 medium potato (finely chopped)
    Cheese (cut into strips)
    1 medium onion (minced)
    3 cloves of garlic (minced)
    Salt to taste
    Ground black pepper to taste
    1 teaspoon of sugar
    Red bell peppers (optional)
    1 teaspoon of fish sauce (optional)
    DIRECTIONS
    Heat a pan (no oil) and then add the corned beef. Saute them for a few minutes until the sauce almost dries up. Turn the heat off and let this cool down.
    Heat some oil in a pan. Add the carrots and potatoes and then cook for a few minutes until half cooked. Then, set aside.
    Heat some oil in the same pan. Add the onions and garlic and then saute until light brown and aromatic. Add the corned beef and stir a bit. Then, add the carrots and potatoes. Toss them gently until well mixed. Season with some black pepper and sugar. Add some bell peppers (optional). Season with fish sauce.
    Turn the heat off and let the corned beef mixture cool down.
    Prepare the lumpia wrappers and the cheese strips. Put around ⅛ cup of the corned beef mixture to the wrapper and add a strip of cheese. Wrap and roll the wrapper gently then fold the sides to secure. Seal the ends using water or egg whites. Do these steps with the rest of the ingredients.
    Heat a lot of oil in the pan using medium heat. Fry the corned beef lumpia by batches until golden brown and crispy. Flip to cook the other side. Transfer them to a strainer or paper towel to drain excess oil and maintain crispiness.
    Place the cheesy corned beef lumpia to a serving plate together with your favorite dipping sauce. Make papak or have it with some hot steaming rice. Yum!
