Cake Sponge with Cake Improver Recipe :
Ingredients :
Sugar 100 gm
Eggs 4
Cake improver 4 gm
Flour 100 gm
Vanilla essence 2 drops
Method:
Beat eggs, sugar, vanilla essence, and cake improver in a bowl until it becomes four times (tetra) in volume. Now fold in flour and mix well. Pour the prepared batter into the cake pan and bake at 180 degrees Celsius for 20 to 22 minutes. The cake improver will help the cake batter in aeration. It will keep the cake sponge less dense, and fluffy and increase the soaking margin.
Caramel Apple Cheesecake
Ingredients for the Base:
Biscuits 200
Butter 80 gm
Ingredients for the Filling:
Cream cheese 200 gm
Cooking cream 200 gm
Icing sugar 100 gm
Toffee caramel sauce 150 gm
Whipping cream 200 gm
Gelatin 28 gm
Water 100 gm
Ingredients for the Topping:
Brown sugar 150 gm
Butter 40 gm
Flour 40 gm
Apple (cooked & caramelized) for topping
Method:
To prepare the base, crush the biscuits into crumbs and mix butter. Pour in the ring mold, level the mixture, and let it set. Prepare filling, whisk cream cheese, cooking cream, and icing sugar in a bowl. Add toffee caramel and mix again. Now whip the cream up to 60 percent and mix in the cream cheese batter. Sprinkle gelatin powder in water and leave it for a few minutes to bloom. Then warm it for 15 seconds in the microwave and mix in the batter. Pour the filling on the base and refrigerate it for 6 to 12 hours at 8 to 10 degrees Celsius. For the topping, mix flour, butter, and brown sugar well and cook it for 15 minutes in the oven until dried. Caramelize apple cubes in sugar and let it cool. Sprinkle topping on the cake and garnish it with caramelized apple.
