What are those switches on the sides for?

The white knobs? Those are the organ stops, or draw knobs, each of those has a its own name of the different tones/sounds, like a flute, or trumpet, or string. This organ was designed more in the French style. So they adapted the French names. For example; Bombarde, is a chorus Reed and sounds like a trombone. You ever heard the expression “Pulling out the stops”, well that comes from the organ, if you were to pull out all of those white stops, you will hear the loudest sound from the organ. The less stops are out, the softer the organ sounds. (Depending which stop you pull)

Nice so it kinda dampens it in a way to give it a more soft and mellow sound
