I caught a stringray down in Matagorda. All I did was bake it with basic seasoning and it was good. I kept saying when I catch another I will eat and of course that hasn’t happened. Stingray eats the same diet so you gotta expect good meat.

One of the best dishes I've ever had was in Singapore at a Hawker stand in Newtons Circus, Chili stingray. Saute the whole thing in sambal then the meat just flaked off the back. Amazing dish.
I don't really see anyone cooking stingrays here. Maybe I can try to find a dish from one of the food channels to take inspiration from.
I've never used peanut oil to deep fry or cook. Does it have a high temp / smoke tolerance like avocado oil? Avocado oil I just recently discovered is amazing, but it's so damn expensive. 🤔

next time , instead of a deep fry , go without the panko and egg , and just lay them on a pan and bake them at 450 for 10 minutes. Then ya got a flavorful dish.
That might be the best way to do it. More cook time is what we needed. 🙌

Had went to Freeport jetties last weekend got 3 sheep head , Steamed with ginger and green onion ..was good and healthy .Can you try to do a Healthy catch and cook ?
Not sure I could steam a fish. I don't mind poaching them in a savory broth though.
