So good, griddle two thick slices bologna , then added two slices Swiss cheese and two kraft singles, dill pickle slices, thinly slices sweet yellow onions, horseradish and Dijon mustard, and two freshly fried crisp corn tortillas on the top and bottom for double crunch and the flour tortilla wrapped over it all. Griddled to a dark golden brown both sides. And it was delicious.
Made this this morning and it was awesome! The only difference in what I made was that I used bacon that I cured and smoked at home and chorizo that I processed myself at home as well. I have individual cast iron ramekins for the wife and I. A home run!

I think you guys should do an instructional video for us “new to the cooking thing” on how to properly cut up veggies especially onions and peppers. I’ve never been able to master the onion.

“Uncured” is not actually 100% correct. If the sodium nitrates come from a “natural source”, like celery powder, it can be labeled as “uncured”. Check the label and it will say something to the effect of “no added nitrates, except those naturally occuring in celery juice powder”.
