I love your videos. I am from Singapore. My top 4 favourite cuisines are Greek, Spanish, Italian and Japanese and I have watched all your previous videos and I am so glad you are now doing Japanese. Miso cod is right up there amongst my favourites.

Just a note about why the “black cod” tasted so much fattier and more luxurious than the cod you’ve had before: It’s that what the Japanese call in English call “black cod” isn’t a species of cod at all. My people (New York Ashkenazic Jews) have called it sable for as long as I’ve been aware of what fish were called. We it as part of our “appetizing” tradition (think bagels & lox, not pastrami and tongue). The first time I heard the name “black cod” was at Nobu back in the ‘90s, when chef introduced the miso glazed version to the U.S. I remember tasting it and thinking that it seemed familiar, but because of the very different way that it was being presented, it took me awhile to realize why. Anyway, it’s a wonderful fish, but it’s not cod.
I like the food at Tsukiji and the general ambience with the narrow lanes, all the choices, small shops etc. However, when I was there the last time (in March 2023, on a weekday), it was so extremely busy, that it took away a lot of the pleasure for me. If I have to queue for 45 minutes in order to get a Tamagoyaki, then I will just not go there. So we ended up going only to places, with no queue or very short queues. The food was still tasty, but I dont like very crowded places, so I dont think that I will return there. Having said that: if you are in Tokyo for the first time, and like food, I would recommend going there.
Haha yes next time we'll definitely go at a less busy time but yeah we'd rather not spend so long waiting in line so luckily it was only really the Onigiri place that we had to wait for (15 mins)
