Take the daily rec amount of vitamin C (and any other vitamins and minerals preferably via food), sure, but you can't "boost" your immune system. That's marketing not science. Also, any extra vitamin C is expelled as waste. I'd say making sure to use sunscreen, sleeping, and hydrating is best to ensure a healthy body while traveling. I've been to Vietnam and that worked for me after that long flight followed by all the walking around.
