Ha ha.. I know what you mean, it's chaotic but after sometime it becomes second nature. Unfortunately here you will have to not just focus on your riding but what other folks might do. After all this time it always plays at the back of my mind the randomness of certain actions :)

So it's down to what's your primary use? If it's more off road the Himalayan is perfect. If it's for a mixture the KTM makes sense. I personally would pick the KTM as it has a good top end and the low down torque for off road can be corrected with the right sprocket and mapping tune. The KTM comes a lot of good features. The Himalayan is more bare bones. What do you currently ride? Or have experience of riding? Most importantly what is your primary use case for the bike what percentage is commuting, off road riding and touring?
I would suggest you to check out both with a longer test ride. I personally would pick the KTM because there is alot more you can do with it. I would also advise you to look at the second hand market olx etc and get a good deal on the 390.. i would advise you to check it out maybe borrow a friends and take it from there.
Traditionally spokes help greatly when off road. These are robust from the rides done and there aren't any issues reported. This is a kit that's available with the Art of Motorcycle folks.

That one was made by art of motorcycles... It was a prototype.. I think they have bettered the design
