I'd call Västerbotten cheese the Swedish answer to Parmigiano Reggiano. The flavor is unique and lovely in cooking. Everything from cheese pies, cheese fondue, cheese soufflé, basically anything where cheese is a major component - this cheese is a stand out performer.

A bit salty like a Prästost, but with a richer/deeper flavor that is both great on a piece of toast in the morning or used in some real cooking for dinner. The Västerbotten is a bit too special (and expensive) for breakfast, but great for cooking. It's one of those cheeses that are unique in flavor in the world.

In hard "yellow" cheeses like Västerbotten , svecia, gruyere, Edamer, English cheddar and so forth the remaining lactose is almost completley broken down by enzymes in the cheese. In fact when i was diagnosed as lactose intolerant as a kid i was recomended to eat hard cheese to supplement calsium intake (we swedes are obsessed about milk drinking and calsium) Of course many who belive them self to be lactose intolerant rather have some form of IBS or such as both milk and cheese can be hard to digest for a stressed or harmed gut system

I'm Finnish and if you know anything about Finland you would know that we are not the biggest fans of Sweden in general. However, even I have to admit that Västerbotten cheese is among the best cheeses in the world. If Parmesan is the king of cheeses, then Västerbotten is the queen. It's actually a shame that its not as well know as gouda, cheddar or some other famous cheeses like that. If it was Italian or French it would definitely be more well known and appreciated around the world. Right now, its just seems to be a Nordic secret, which is in a way, is fine for me. It means more and cheaper västerbotten for me :)
