I've made your original Big Mac copy cat many times, and the one thing I've found to make it even more authentic tasting (and what McDonald's actually uses) is rehydrating dehydrated onions, and using those instead of fresh onions. They actually go well on a lot of burgers, and have a different more intense flavour. Of course I love fresh onion on better burgers, but for a Big Mac rehydrated work perfectly. Give it a try if you haven't before, it gives burgers more of a "Fast Food" flavour :).
McD's original seasoning for their burgers also gives them their classic flavor. 4 Tbls of Salt, 2 Tbls of Accent, 1 tsp black pepper and 1/4 teaspoon of onion powder; mixed up real good, then sprinkled generously on the patties. I agree with the rehydrated onions and sauce being on top too.
Also, put those rehydrated onions on the actual burger after flipping while it is still cooking and let them absorb a bit of the burger's juices. McDonald's was my first job and that's what we did.
Dear Greg, I tried your recipe a few times and I've been satisfied with it. But I recommend you to use dehydrated onions instead of fresh ones (at least that is what they use at McDonald's here in Germany ). In order to get even closer to the original I freeze those patties before I'm putting them on the griddle 😊
Nice reproduction! I had a Big Mac several years ago after not having ome for a long time. They are no where near what they were in the 70's. I still remember the jingle! Yeah, I am that old...😳
mickeys is just like all big-business- they are good at cutting costs and cheaping out on their products. look at what kraft, nestleys and hersheys have done to the brands they've acquired....
I discovered Ballistic BBQ several years ago when I did a Google search on a homemade Big Mac and found your video. The burger videos were always my favorite, so I was extremely pumped when I saw you were starting a new channel devoted to these recreations.
Gotta say. Props on using the right size patty and actually building it right. (1.6 oz patties and 1 slice of cheese) I've seen too many ppl make a "big mac" and use 2 slices of cheese or bigger patties bc it will be better that way.
SWEET! I gotta try this!!! Thanks, sir!!! Just a quick look at your vids list and watching this for my first of your vids, this looks like you could have one of my fave cooking channels on here.
There is no comparison. If for no other reason, Sam couldn’t put a TH-cam video up by himself if his life depended on it. He’s a talking head. That’s not a shot at Sam, I’m sure he would tell you the same thing. In contrast Greg is running five cameras, does all his own editing, and actually researches his copy cats instead of just using the name brand for clicks and then whipping it out with whatever is in his fridge. I personally don’t have anything against Sam but from the perspective of a TH-camr, this is a little like comparing Britney Spears with Bob Dylan. There’s no doubt Sams way grew his channel faster than the rest of us, so good for him. It’s just not in the same ballpark as what Greg does. Greg is the total package...and a heck of a great guy too.
That's a great response Justin. I'm a big fan of yours also. Troy, Russ Greg, Malcome all you guys are bad ass. I've learned everything I know from you guys. Keep up the good work🖒🖒. Off topic but do you have any plans with the masterbuilt 560?
OMG, wow. Yours looks way better. Thanks, I am going to try it with the wife. It would be nice to see it beside a Big Mac to see how better yours looks like. Thanks and keep up the great vids. Stay safe and healthy
Love your videos and have been a fan since the beginning! Would love to see a copycat of the discontinued ARCH DELUXE that McDonalds had in the 90's. I remember them fondly when I was a kid! Thank you!!!
That's one of the things I love about your copycats as that you do always keep it as true as possible and I appreciate that Greg. A fine looking burger man!
Gotta try this one, thanks for the video. New subscriber, I like your straight forward, no frills presentations. So many gimmicks out there these days. Keep up the good work!
Greg I agree ,yours is the most authentic(Guga went crazy on his)I like that u said the "old Mcdonald's"which was so much better.I'm old enough to remember 15cent burgers and 19 cent cheese burgers.
actually macdonalds were 10 cents until about 1963. when they went up to 15 cents, our world stood still. candy bars had just doubled in price- everything was going to hell. twinkies were now 12 cents OMG!!
looks decent. But for the onions, take minced onion from the seasoning isle, pour some into a cup and cover them in water and let them sit overnight. That will give you the Mcdonalds onions. Also, use different pickles. Thin burger pickles from Walmart are closer to to Mcdonalds pickles than Dill
Awhile back i came across the big mac sauce recipe that was included in the 1968-1969 McDonald's managers handbook. It was used as an emergency back up recipe in case a particular restaurant ran out of sauce it consists of: 1/4 cup miracle whip 1/4 cup mayo 2 1/2 Tablespoons wishbone deluxe French dressing 1/2 Tablespooon Heinz sweet relish 1 Tablespoon Vlasic dill relish 1 teaspoon sugar 1 teaspoon white vinegar 1 teaspoon dried onion flakes 1 teaspoon ketchup 1/8 teaspoon salt Mix well then zap in microwave for 25 seconds then mix well again, let it chill in fridge for a couple hours. You should make this recipe and compare it to your own.
As a kid my first job was a cook at mcdonalds, there is only one layer of onions and we ran out of sauce all the time, we then just substituted with 1000 island salad dressing, them telling me it was the same thing just a little runnier
Probably the best Big Mac clone yet. We've talked about this, it isn't the best burger by far, but man am I going trough the kitchen looking for the ingredients right now.
Definitely passes the look test! Agreed with the comment below that the real thing uses dehydrated onions. See my comment on your Travis Scott Burger. Great cook, though. I'm sure yours tops the real thing for taste!
Wow, that was really cool. I never thought I could make a Big Mac - now I know how to do it. I may try this one myself :) So glad Baby Back Maniac showed us this new channel. Big thumbs up 👍
Will dill relish instead of sweet relish make a difference? I only buy dill relish, and I don’t want to buy a jar of sweet relish just for a couple of teaspoon fulls.
For lovers of mayo, particularly mayo on burgers and sandwiches, try subbing the Mac sauce for mayo the next time you make a Big Mac or order one. I saw a maintenance person at McDonald's order it once, so I tried it. The contrast of the sweetness of the mayo with the cold crisp chopped lettuce and the sour pickles is incredible. Now, that's the only way I order a Big Mac.
@@tommurphy4307 Absolutely! That's the point. You can ask for mayo and tell them not to put mac sauce on, so you're having the sandwich with mayo instead of mac sauce. 1 cup + 4 Tablespoons Mayo
3 Teaspoons Sweet Relish
1 Tablespoon Prepared Yellow Mustard
1 Teaspoon White Wine Vinegar
1 Teaspoon Onion Powder
1 Teaspoon Garlic Powder
1 Teaspoon Paprika
2 Teaspoons White Sugar

Is there a UK equivalent of sweet relish?
@@shaunb813 the closest I could find here in Australia is gherkin relish made by masterfoods...

Came from Guga. As a huge burger maniac, I am happy he shared this
Thanks, I appreciate the effort to re-create a iconic burger rather than trying to elevate it into something it just isn't.

Thanks for the sub! I try and get these "copycats" as close as possible to the real-deal. I appreciate your support!
i like to use the briosche buns for my homie-macs
Greg, one of their main "secret" ingredients is Turmeric powder. Give it a puff and all a sudden it tastes more like that classic mac sauce
How much would you use in the recipe Greg has posted? 1/2 teaspoon? More? Less?
@@mattl9070 for that amount of sauce, "a puff" from a bottle, or a pinch would do, which I guess would be about a 1/4 teaspoon
