    NOTE: Just a note to clear up any confusion. In Thailand, there are a number of different types of water plants all referred to as “lotus.” So the actual lotus in English includes the big lotus leaves, roots, and flowers, but the stem is very tough and inedible. What we’re harvesting in this video is referred to in Thai as lotus stems, but in English it’s actually water lily.
    Phatthalung (พัทลุง), Thailand - Welcome to Phatthalung, which is one of my favorite provinces in Thailand - one of the most relaxing and chilled out places you can visit in Thailand. Today we’re at lake Thale Noi, famous for lotus and water lilies. After we harvest wild lotus stems and flowers, we’re going back to Uncle Sanan’s house to cook some spicy Southern Thai food - plant based (vegan) food.
    We also harvested fresh water mimosa (ผักกระเฉด pak krachet), which is one of my favorite vegetables, so it was very cool to be able to pick it fresh - actually forage it wild - from the lake.
    In order to get cooking, Uncle pounded up some garlic and pepper, and then stir fried both the water lily lotus stems with garlic and black pepper and soy sauce. Then he also made the water mimosa using the same recipe. Next, he pounded up some fresh turmeric and stir fried it with rice to make an amazing bright orange turmeric rice, which he wrapped in a lotus leaf for extra flavor.
    It was an amazing plant based vegan Thai food meal. And again, it’s so cool to be able to harvest or forage your food before you eat it.

    I can see how "happy and excited" the locals, especially the older people are in sharing their local produce, cuisine and the experience. It makes me smile thinking that they too can play a huge part of local tourism and experience. I know mimosa leaves and roots are medicinal but never knew that young leaves can be prepared for a dish

      Do you know if the Mimosa is the same as Mimosa Pudica (sensitive plant)? Its the leaf which folds up when you touch it.

      ​@@Jayapullani No, Mimosa Pudica (called maiyaraab in Thai) has medicinal properties but as far as I know it isn't used in cooking. Water mimosa is called pak krached and can be stir-fried or added to sour soup (gang som).

    There are people in Puerto Rico that choose to live like this, rustic life in the mountains and by the rivers. They wrap food in banana leaves for flavor, they also harvest wild root vegetables. Mark, you must visit someday!

    I love that you take Mika everywhere you go. I love that he is learning so much being out with his parents. But I was wondering about his schooling. Is he homeschooled? Or is he still not of age to attend school? Either way, you are doing a fabulous job teaching him about the world!

    14:41 that quick stir fry vegetables lightly seasoned and it is still retain some snap, if you can hear it lol u know what I mean. Also 16:46...I didnt think I could crave vegetables until he reminded me there's more to vegetables than what you get in restaurants in the states lol.

    I enjoy all your channels but the videos I enjoy most are the ones where you give us a glimpse of life off the beaten path (literally). In a strange way, with the pandemic limiting travel, it allowed you to uncover these places even more than before. Joel does a great job of this as well. Some people see the wonder of the differences between people/culture but what I see is that, in fact, we are all very much the same. "Keep on keepin' on".
