  • BBQ Rice
    Ingredients
    For chicken
    • 2 tbsp Yogurt
    • 2 tbsp Tikka masala
    • 1 tbsp Soy sauce
    • 2 tbsp Ginger garlic paste
    • 1/2 tsp Black pepper crushed
    • Salt to taste
    • 2 tbsp Lemon juice
    • 1/2 kg Chicken boneless cubes
    • 2-3 tbsp Cooking oil
    For smoke
    • Charcoal
    • Few drops Cooking oil
    For rice
    • 1/2 kg Basmati rice boiled
    • 2 tbsp oil
    • 6-8 garlic finely chopped
    • 1/4 tsp Black pepper crushed
    • 1/4 tsp White pepper powder
    • 1/4 tsp Ajinomoto
    • 1/4 tsp Cumin powder
    • 1 tbsp Soy sauce
    • 1 tbsp Sriracha sauce
    • 1/4 tsp Chicken powder
    For veggies
    • 1 tbsp Cooking oil
    • 1 cup Cabbage
    • 1 medium Carrot julienne
    • 1 Capsicum) julienne
    • 2 tbsp Soy sauce
    • 2-3 Green onion julienne
    • 1/4 tsp Black pepper powder
    • 1/4 tsp White pepper powder
    For sauce
    • 1 cup Mayonnaise
    • 1 tbsp Tomato ketchup
    • 1 tbsp Sriracha Sauce
    • Salt to taste
    • Pinch Black pepper crushed
    • Pinch White pepper crushed
    • 1/4 tsp Mustard paste
    • 1/2 tsp Ginger garlic paste
    For tadka
    • 8-10 Garlic chopped
    • 1 tsp Red chili crushed
    • 2 tbsp Cooking oil
    Instructions
    For chicken / smoke
    • In a large bowl add all the ingredients together for marination then do the smoke to coal and set a side for 2 hour. Then heat oil in a pan and cook smoked marinated chicken well and set aside.
    For rice
    • Heat oil in a pan and add chopped garlic to it. When garlic turns golden add all the ingredients and cook for 1 minute. Now add boiled rice and mix. Cook then leave on dum/steam. Keep aside.
    For veggies
    • Heat oil in a pan saute all the veggies for 2-3 minutes into high heat. Then keep aside.
    For sauce
    • In a bowl mix all the ingredients together and keep aside.
    For tadka
    • In saucepan add cooking oil, garlic and mix well. Add red chili crushed,mix well and fry for 1-2 minutes.
    Assemble
    • In serving dish add rice, cooked veggies, cooked chicken, chili+garlic tadka, and drizzle prepared sauce & serve!
