I am at the stage where I walk beside my horse when I know they want to roll and look for signs of the horse wanting to roll and then I add an aid, copying bodylanguage and adding treats when I can..

When my little git was a few weeks old I used to say down and tap him on his knee, with my hand he eventually cottoned on. I could say down or tap him on his knee. My old stud man boss said want to understand your horse sit in the field and watch him.

About your first steps - I spend a ridiculous amount of time with my horse including hours of non-demanding time but he just doesn’t lie down. I know he sleeps flat on his side at night from how he looks in the morning, but what would you advise when capturing the behavior is not possible?
