Do you mean white powder added at the end of the purple candy? Im just guessing, but maybe it just some kind of flour so the candy is not stick to each other. It added after the candy done, so i don think its citric acid. Just my guess tho
It looks like they added 2 different white powders at the same time. I’m going to make a very uneducated guess that at least one of them is sugar. The other one I have no idea.
Yes, that is citric acid. Even in a sweeter tasting candy like, say, banana, they have to add it to make the flavour more robust and for our tongue to differentiate the sweet and sour. There are times they add a powder to the acid, but that's just to colour it white. They only added acid here.
