I really liked the video and am glad you added the recipe. I don't know how much difference it would make but you might want to talk about plant based recipes as opposed to vegan recipes. A lot of people seem to feel like vegans are too hard core but being a dietician maybe you can reach more people using the term plant based. I am glad you talk about the nutrients in your food. I read Bloomberg magazine and just today they had a big article about all the companies selling plant based food. I was glad they talked about the fact that some vegan food is worse for you than animal protein because of ingredients like coconut oil. I think it was the Impossible burger that has more saturated fat than a lean hamburger. Keep up the good work. A plant based diet is the only one able to reverse most chronic disease.
rba1b2c3d Firstly, thank you so much for such detailed feedback! It’s funny you mention saying ‘plant-based’ over vegan as that’s usually they term I use! But I’m glad you pointed that out so I can be more mindful about my word choices. I am hoping to integrate more about food & nutrition weaves into van life to also offer some education because you’re right - the power of plant foods is amazing!
@@TravelingDietitian I was thinking some more about reaching people. Another group you might draw in are the Instant Pot group. I was listener to a vanlifer guy and he checked out the power draw of an Ipot and found that once it reached cook temp, the power draw was very low so he now does 90% of his cooking in 1. He had the 6 quart which is huge for 1 person but now they make a 3 quart. The reason I like it is because it is also a rice cooker. I don't think you would want to use it as a slow cooker in a van but maybe you could. The other device I try to teach people about is a rice cooker. People seem to want to cook in a hurry so I tell them how they can put ingredients in a rice cooker and then walk away. I think young people would like to cook more but have come from a family of prepared food heated in a microwave or have eaten a lot of fast food. You can always point out that any recipe you make can have some kind of meat added to it and just say that you don't add it since you don't need it in your diet and are healthier because of it.
rba1b2c3d that’s interesting with the instapot - makes sense it wouldn’t draw much power once it’s at temp though, how convenient! We have a two burner propane stove top in here and so far it’s been wonderful! We never used rice cookers or instapots in our house usually, but I know there’s a large crowd who swear by them! They definitely simplify cooking a bit. I moreso take the approach of slowing down and taking my time (meaning like 30 mins max, really) for cooking meals then enjoying them to get the nutrition and pleasure out of eating.
I like your spunk,..I would like to see more of the day to day type activities, such as having to find a Planet Fitness, stealth camping locations, etc....Also I might suggest including the BF in the videos since he is traveling with you, unless he is wanted by the law and is trying to hide :) ..Best of luck to you!

For free campsites, we mostly use iOverlander (app) or the site freecampsites.net. I personally prefer iOverlander as it’s more user friendly, but both are great for finding free spots. @@TravelingDietitian We ordered a Ford Transit cargo van back in April 2017 and it is at Quigley now for a 4x4 conversion. It is, supposedly, going to be finished Wednesday. It has been a long process. My husband is retiring in 2021 (at 56) so we will take our time converting it. We will be using it on the weekends and vacations for now. We will travel a lot more when he retires but I don't think we will ever do full-time but you never know... I would love grocery videos and, yeah, cooking, too. I am kind of worried about eating well in a van. We like to eat healthy, more of a Mediterranean diet. Thanks for the campsite tips! You do a great job with your videos! Excited to have a new vanlifer to follow! Take care!

So great that y'all can take your time on the conversion so there will be less pressure having no specific timeline to stick to. Regardless of the length of time you will be traveling, I'm sure it will be nice to have your own home on wheels and the freedom of staying as long or short as you'd like :) I wish you the best in your conversion!! Since you're already following a nutrient-dense diet at home, it sounds like you'll be able to build your van around having all the resources you need to continue doing so. For us, the most important part was having a large enough fridge to stock up on all our fresh goodies for a week's worth of meals. :) One of the biggest things I've learned is just to plan out meals as I would in a home then adjust as needed (i.e. I can't use an oven so saute veggies VS roast and etc.). This way I didn't end up changing my eating habits all too much. Sorry, I feel like I've written you a novel, haha! Thank you again for your comments and feedback!

I am a bit nervous about choosing a fridge. I would like to have a freezer. My husband is thinking a dometic but seems like there is one other...can't remember. Good plan. I want to stick with my healthy diet for sure and not rationalize the fact that I will be hiking nearly daily (gives me chills) so I can eat more or badly.
