How To Make Turkish Urfa Kebab
1kg lamb mince (80/20)
1/2 brown onion, finely chopped
1 handful chopped parsley
3 crushed garlic cloves
1 tbsp salt
1/2 tsp ground cumin
1/2 tsp black pepper
1 tsp urfa chilli flakes (can be substituted with aleppo chilli flakes)
Made these last night on the barbecue... They were fantastic. The texture was perfect, they were juicy but not soggy and they stuck to the skewers perfectly. The spices were perfectly balanced too! They tasted on par with the Urfa kebabs I had on holiday in Turkey at the proper restaurants there. They were a huge hit with the family, everyone wanted more. I hugely recommend these!

Hi Henry. Hope you are well. Did you ever try marinate your minced with all ingredient in vacuum pack in the freezer. Thaw it and grill them weeks later. Thanks

Hi Henry - love your videos and love your Mangal! I was recently in Adana, Turkey for a wedding and we saw just such a grill in action at a local outdoor resturant- one of the best meals any of us had ever had - served with all sorts of Turkish salads!
Question: Another wonderful meal we had in Adana they described as "dolmos" - it was a small eggplant shell (aubergine) stuffed with rice, spices and some minced lamb I believe - unbelievable! We brought home to California a string of the sun-dried small eggplant shells that are sold in the street markets there for making dolmos. Any chance you do do a video on how to make these wonderful Turkish dolmos?

geniuspharmacist my grill doesn't have a brand, I got it imported from Iran. It's just a basic gas manghal

@@geniuspharmacist I think these are just flame tamers. If use a regular gas grill and elevate the skewers (using a rack for example) would be the same thing. But the charcoal mangal/grill is the best option)

Great video Henry! i ate both adana and urfa and i thought adana was made spicy and urfa was the same as adana but without the spice :)) didnt knew there are special urfa chillies
