We do Chipotle burrito bowls every week - it’s our favorite and so cheap and easy. While the rice is in the instant pot I just cook the canned beans and frozen rice and chop the veggies. Done.

A little sugar sweetens the Jif cornbread mix and doesn't throw off anything with the measured ingredients. Better: Mix a Jif cornbread mix AND a jif yellow cake mix together! Ahhhhh.....
When I make cornbread (whether from a mix or from scratch), I do the following to give the best result possible: I put the dry ingredients in a bowl and make a well in the center. Next, I beat the egg in a separate bowl and mix in the milk and any fat the recipe calls for (like melted butter or oil). I dump this liquid mixture into the well of the dry ingredients and stir it gently with a spatula (almost like "folding" the mixture). I stop when the ingredients are just about combined (it may look a little bit lumpy, but that is OK). Corn bread mixes as well as scratch cornbread recipes usually call for some flour. By mixing gently, you do not "develop" the gluten which helps to give you a better result. This approach applies to all quick breads. If your recipe is all corn meal, you don't have to be so careful because there is no gluten. I'm going to let my batter rest, as you suggested, the next time I make cornbread. Some beans, especially kidney beans, have a chemical which can make you quite sick (or worse if you eat the beans raw). I've been told that cooking them in the crock pot is not enough to leach this chemical out of the beans. If using a crockpot, I soak my beans overnight in lots of water (3 - 4 cups per 1 cup of beans), drain them, then cook them in the same amount of fresh water for 10 minutes in a pot on the stove. I discard the cooking water then go on with my recipe. Bonus: This definitely helps to reduce the gas that beans can cause! ~ Anastacia in Cleveland
Ashley P Its all about the spices! You could easily add in spices more commonly used in Mexican dishes (cumin, chili powder) to the first dish. And she has her ravioli lasagna in there as well.

Videos like this remind me that I can simplify my meals a lot!! It hurts my brain sometimes to think of meals because I am in the habit of making them complicated and having multiple components. Thanks for reminding me to simplify! I would love to see meatless options since those would be even cheaper! I would like to start serving meatless meals once or twice a week to cut down even more.

My husband and I just got married in November. He’s 22 and I’m 20 (21 in May!!!) I feel lucky because we budget $200-$250 a month for groceries. We’re both in college full time and work part time. We eat well and have good meals with our budgeted amount. My grandma tells me all the time that we are lucky because sometimes she only had money for rice and potatoes. I love this video idea because even though we aren’t on an extreme budget, we are on a budget! Please keep doing this ❤️

I actually make most of these meals for my family.. I just remix it a bit. For the “Cajun rice” I don’t mix it. I cook the sausage, peppers, onion and tomato just as you did and serve over the rice. (I add a small can of tomato sauce sometimes) For the sausage potatoes and green beans, I mix them in a baking pan with onions and peppers then bake until the potatoes are done... It’s soo good and I don’t have to stand at the stove.

I made the bean recipe! I added a can of chipotle peppers and adobe and I switched to chicken bouillon cubes. Omg! It was great! I used the dry pinto beans from my $5 Fresh Cart box so it ended costing less than $5 to make, I served it with leftover rice and edamame for the night before! 10/10. Saw your video this morning and I had it for dinner tonight. 😋

A trick for cornbread, let the batter sit for 5-10 min, it will rise and make fluffier bread! I also sprinkle a little sugar on top for a crunchy top!

Ps....soaking beans does more than soften them. It takes a lot of the natural gases they expel so less gas for your belly. Lol

I substitute a small can of cream corn for the milk in my Jiffy corn muffins. They are so good.
Do you just add the whole can? And no other liquid?
