Hello Si ! is there a substitute for the greens? what do they taste of? another for us to try,yes the way to make a delish stock is with chicken,I tend to use chicken drum sticks as I only cook for two these days !
Mulukhiyah was prohibited in Egypt by Fatimid caliph al-Ḥākim bi-Amrillāh because it was a favorite dish of Sunni Umayyad caliph Muʿāwiya. Egyptians just wait until the death of al-Ḥākim and continue to cook Mulukhiyah. 🙂

Not really a sub for it, you could try, it is a spinach type of green but it cooks thicker and is a little slimy
You can use callaloo, another amaranth green
