Yeah, that was the correct way to enjoy the meals: the congee is hot and of only 2 ingredients (water and grain), and it can wash away the strong, fatty taste of beef, and make the mouth comfortable. And congee is easy to digest, and adds a lot of water to he meals, leaving stomach with less burden.

The meat--stuffed paratha--like dish looked SO good! I was worried that it would burn Dhinesan's mouth when he ate it, given all the steam rising out of it😂~ I've heard of the doorknob dumpling and the fried enema from Blondie in China videos, and those alongside Peking duck, guotie, donkey burgers, guo kui flatbread, and Qianlong cabbage are other Beijing/Chinese foods I heard of from Amy's videos and others' that I want to eat some day!

    北京菜和粤菜(广东菜)的差别挺大的, 很高兴你们也喜欢. 有机会来江南尝尝另一种口味, (我在苏州)

Will you be visiting Yunnan, Xinjiang, Tibet (separate permit required), Inner Mongolia, Heilongjiang provinces? Border provinces have the most interesting architecture, diverse ethnicities, breathtaking natural landscapes, cuisines compared to the major cities like Beijing and Shanghai, which are unique on it own yet much the same to me. Go to Yunnan, Xinjiang, Inner Mongolia in Spring or Autumn and Heilongjiang (eg. Harbin, Mohe) in winter for the Ice Sculpture and Snow Festival. If you are lucky, you may catch some Northern Lights in Mohe Village.

Every region has delicious, hard to say which is most delicious, personal taste is subjective.
