    RECIPE -

    350ml plain flour
    370g caster sugar
    60g cocoa powder
    1 tsp bicarbonate of soda
    1/2 tsp salt
    150g chocolate chips
    1 cup cold coffee
    1 cup buttermilk
    225ml vegetable oil

    Made these yesterday with an orange buttercream and Halloween themed sugar decorations. They were the best chocolate cupcakes I have ever had!!       I only noticed that Jemma messed up with the oil measurement after I put the cupcakes in the oven. The cupcakes turned out to be softer but still damn delicious!

    I've tried this and omg! This is soooo exquisite it's super moist I did it yesterday and today is still so delicious. It was super fun to make I did it with my son. And to the person below who commented on how to make buttermilk thank you. I will make these cupcakes for a birthday this weekend I am so excited.

    here are the ingredients and their amounts :)
    DRY:
    350g plain flour
    370g caster sugar
    60g unsweetened cocoa powder
    1 tsp bicarbonate of soda
    1/2 tsp salt
    150g dark chocolate chips
    WET:
    1 cup coffee
    425ml vegetable oil
    1 cup buttermilk
    3 large eggs

      Thanks, Chloe! I decided to (try to) write the method! :)
      Method:
      If you’re a very fast baker then preheat your oven to 160°C (or 320°F).
      In a bowl sift all of your dry ingredients and whisk them together thoroughly. Set aside. In another, larger bowl add your cooled coffee (or as I am using, cooled unsweetened hot chocolate) , oil, buttermilk and room temp. eggs and whisk all of this until completely smooth. Add your dry ings. to your wet and mix until completely combined. Now fill your prepared cupcake liners 3/4 of the way full with batter and bake in your preheated oven for 20 minutes.
      Makes 24 cupcakes.

    I just made these cupcakes and they were delicious! The only thing I'd change is take down the oil from 225 to 200 ml. Also, I didn't have buttermilk so just added lemon juice to normal milk and let it sit for a while. This will now be my go-to recipe!

    24 cupcakes
    Dry
    2 4/5 cups plain flour
    1 7/10 cups caster sugar
    1/2 cup cocoa powder
    1 tsp baking powder
    1/2 tsp salt
    5.2 oz dark chocolate chips
    Wet
    1 cup coffee
    1 9/10 cups vegetable oil
    1 cup buttermilk
    3 large eggs

      Olive oil kinda has a little taste to it, try canola oil. But if you're going to use olive oil anyway, at least make only 1/2 recipe, that way you won't have spent as many ingredients in case it doesn't work

    I made these this weekend and they came out great. I did use 425ml that was stated in the video, instead of looking at ingredient list 🤣 they still came out GREAT with all the oil

    I tried the recipe because it was so easy......and it was the best chocolate cupcakes...!! I didn't have the buttermilk, so I replaced it with 1 cup of milk and 1 3/4tsp cream of tartar...

    I've tried the vanilla and the carrot cupcakes. Both turned out great!-thanks for the videos! The chocolate cupcake turned out tasting too oily and almost under-done. Jemma, could you lay this oil controversy to rest? Is the 425ml oil correct or did you misspeak ( according to other comments, it should be 210ml as in your book). I use only organic ingredients so it's not cost-effective to be experimenting too much with the oil quantity. Thanks!

    Hi Jemma!!, I'm from Mexico, and I'm having some trouble getting buttermilk, is there anything else I can use instead of buttermilk??

      I always forget to buy buttermilk and there IS a solution! Measure the same amount of regular whole milk then add lemon juice! Usually I just add the juice of half or a whole lemon. Stir it around and then let it sit for half an hour or so. It curdles the milk and works a treat!

    Make Buttermilk with 1 cup (236ml) regular milk and 2 tbsp lemon juice (or vinegar) stir and then let it sit at room temp for 30 mins it'll be all curdled and bubbly, that's what you need.

      Rainbow Rose of course you can. But butter will make your cupcake stiffer than oil version after u put in fridge

    Yep, she's totally gotten the amount of oil wrong in this recipe, how? I don't know! In her book it's 210ml, and also in her video for the creme egg Easter cupcakes, which uses the same choc cupcake recipe, it's 210mls. I made these according to this recipe and they are definitely too oily, so I will be cutting it in half next time to see how it goes.
    For those asking about using butter instead of oil, you will need to use about 30% more butter and reduce down the buttermilk slightly, as oil is 100% fat but butter is 80% fat plus milk so you need to compensate for the extra liquid and less fat by adjusting the recipe.
    But definitely if you stick with oil, halve the amount the she says in this recipe, it's wrong!!!!

      +Eveni Astrid I made them with the oil amount in the video and they rose perfectly. Yes, they were a tad oily, but nonetheless still delicious. (They didn't taste oily, just the bottom of the muffin tin was oily where it seeped through the paper) Check out my instagram faithfoodfamilyfun for pics.       +Common It No! Butter is a totally different thing to buttermilk. If you want a substitute you could try yoghurt, sour cream or even milk which has had a bit of lemon juice added it and has curdled a bit. But not butter.

      +FlamingHansol You won't actually taste the coffee, it will just enhance the chocolate flavor otherwise why not use caffein free coffee?

      +FlamingHansol use the same quantity of water instead of coffee. the milk and lemon juice instead of buttermilk works for me.

    Can I ask you get the veg oil wrong is the chocolate chips correct 150g as in your 12 chocolate cupcakes you only use 35g which is a lot less then half I use loads of you recipes you are a amazing and would like to know which is correct please

    Hi Jemma! Loving your videos very helpful.
    When the cupcakes rise well like that does it make it harder (not as neat) to but icing on.
    In your Buttercream piping tips video the cupcakes you use are quiet flat..
    Will they deflate a little over night or do you have any tips for this?

    Jemma, I'm having such a hard time getting the cupcakes to rise! 😥 I live in the US so I have been converting (grams to cups, etc.) I'm not sure if I'm doing it wrong. Also, does everything need to be room temp? Your recipe looks AMAZING 💕

      I’ve had the same issue! I’m from the UK and every time I make them they don’t rise. I feel like adding baking powder will help resolve the issue?

    Wouldn't you want the coffee to be HOT so as to bloom the chocolate? You can temper the mixture when adding hot to the eggs so as not to "cook" them, though I doubt that would happen anyways.

    Dear everyone! I can't believe that this video has had so many hits! Thank you all so much for watching. What is even more shocking is that it is only now, over 2 years after I uploaded it, that I have been made aware of a problem with the measurements! I get so many comments and it's pretty difficult to keep up with them all but someone recently questioned the amount of oil in the recipe and sure enough, for some reason I have said you should put in 425ml rather than 225ml! Please accept my apologies and go forth now and make these cupcakes as hey are meant to be!!! xxx

      In the video, you say to use 350 grams of flour, however in the recipe you shared in the description it says 350 ml. I'm guessing that grams is correct?

    DIY Buttermilk: Stir 1 tbsp vinegar (or other acid such as lemon juice) into 1 cup of milk, stir and wait 5 mins. Then you have buttermilk for this recipe. Last valentines day I wanted to make these cupcakes but no shops in my town sold it, sadly I didn't know this then but now i do and now you do too! ^.^ Hope this helps you guys~!

      Kimiko Aki I wish I had read this comment before. I've just finished baking and couldn't find buttermilk, so just used milk. It came out alright, but I'll have to bake it again using this as buttermilk. Thanks for the tip.

      Ahh jeysus lads.. Buttermilk at home is basically boiled whole organic milk leave in cold place under cover for 2-3days... Done. Its milk that turned sour. Sorry for the ugly truth. Don't use the milk in a carton. The more natural the milk the better. If the milk was processed milion times u will end up with bitter milk and diorrhea :) sorry again.
