Roast Pork, Prosciutto, Figs and Pine Nuts

  • This recipe is all time. Bit of work but well worth it, perfect for a special occasion. I use fresh figs but you could also use dried or even dried dates or apricots. If you have time its always great to prepare the pork, truss it then wrap it in plastic wrap and let it sit in the fridge for a few hours or even overnight before cooking.
    If you find that the base of the roasting pan dries out add in a cup of water.
