Years since Ive been to Manchester, but in answer to the bee thing. Its become the symbol of the city because of its association with hard work. We have the expression ‘busy as a bee’ in the UK because the bee is considered hard working, Manchester made this same connection and chose the bee, hence why you saw it everywhere
