Russian Salad Olivieh, Better than any Potato Salad

  • Olivieh is very, if not the most popular salad in Eastern Europe. Its presence on any table signals that the holiday has begun. My family loves this salad and I make it on very special occasions.
    Ingredient list:
    3 large potatoes
    2 medium carrots
    2 eggs
    1 cup green peas
    4-6 oz cooked meat (ham, turkey, chicken, beef)
    2 large pickles
    1/2 cup green onion
    3/4 cup mayo
    1/4 sour cream
    1 ts mustard
    1 ts dill
    salt/pepper

      Thank you for your comment. I find that straight up mayo is too strong, often this salad is looking for a soft dressing approach. I hope you try.

    What I wonder about is the herb that you added to the complete potato salad. We can use different herbs for this and I just wonder which herb that you added. I also wonder what you might recommend for a substitute for the mayo. Maybe plain yogurt would be just as good while being lower in saturated fat. After all, some people, including myself, are born with problems of triglycerides, as well as cholesterol..

      I like to use dill to my Olivieh salad. As far as substitute for mayo I have to say there is no substitute. This salad was created in the early 1900’s by a famous chef in Russia. The main ingredient is mayo. You may want to make mayo from scratch using good quality olive oil and pasture raised eggs.

    I'm an American in Iran, and oliviyeh is very popular here. I wonder whether it was brought by the Russian troops in WW1, or whether it was here before.

      Interesting! This salad was designed by a French chef who lived in Russia where he created food for the Russian nobility. After the Bolshevic revolution in 1917 there was no more exotic ingredients available to create same menu. Therefore he changed it up to fit the current food availability and created Салат ОЛИВЬЕ

      @@lulishomestead6767 Strange. They were mostly trying to colonize and occupy northern Iran from 1907-1917. So it must have been brought later. But it's become a customary side dish here. You can get it at any restaurant.
