If you had bothered to do even 10 seconds research you might have found a satisfactory answer. @@RedwoodLegal shows your level of professionalism, yes below what is required for someone who deems himself a legal adviser. The fact you joke about being drunk on the job indicates serious concern.
Terribly sorry if ive missed this and i will listen again but if we feel theres a good case a claim will be on the small track, would we still get time given the redtraints to give our witness statement or is it done at the same time as the defence to cut down on time? Will a court give us directions or leave it to us to decide to give an account other than our defence ?
Is this filed with the bundle the court asks for before setting the date of a hearing with the my(claimant) witness statement for the Particulars of claim and itself?
No, the reply to defence and counterclaim is to be filed with the directions questionnaire, or with 14 days of receiving the defence if the dates are different as per CPR 15.8
In a reply and defence to counterclaim, does the original claimant become the defendant? and the counterclaimant becomes the claimant? or does it remain as original claimant and original defendant? because the response pack says write reply to counterclaim as defendant. Thank you!

No, you remain the claimant - as you can see from the example in the video the building company suing the customer is still the claimant.
