These look great. The cupcake itself seems a very easily, well mannered recipe. It's certainly a lot easier to make than a creamed method cupcake. I usually prefer to use crème fraîche in my ganache as it gives a better taste, a lovely tang that contrasts with the chocolate & creaminess.( I used to teach in a private language school in France, & as a leaving present, some of my students bought me the recipe book of a master chocolatier as they knew I loved baking & cooking & was a chocoholic too. Crème fraîche was his go-to cream in ganache, because he thought it tasted better.) For once though I think a normal ganache would be better because of the pairing with marshmellow.
Those tops on the baking powder and bicarb are a nightmare to take off! Chetna’s lucky the powder didn’t explode out. Would you consider a re-design, please, Waitrose? Great recipe, Chetna, thank you.
