How to Make Thai-Style Pumpkin Soup??
Ingredients:
• 500g pumpkin (peeled and chopped)
• 1 large onion (chopped)
• 2 cloves garlic (finely chopped)
• 1 red chili pepper (optional)
• 1 piece of fresh ginger (finely chopped or grated)
• 1 tablespoon coconut oil (or olive oil)
• 400ml coconut milk
• 500ml chicken or vegetable broth
• 1 teaspoon Thai curry powder
• 1 teaspoon brown sugar
• 1 tablespoon fish sauce (optional)
• 1 teaspoon lemon juice
• Salt and pepper to taste
• Fresh cilantro for garnish (optional)
Instructions:
1. Cooking the Pumpkin:
Peel and chop the pumpkin. In a large pot, heat the coconut oil and add the onion, garlic, ginger, and chili pepper (if using). Sauté for about 5 minutes until softened and fragrant.
2. Adding the Pumpkin and Other Ingredients:
Add the chopped pumpkin to the pot and mix with the other ingredients. Then, add the Thai curry powder, brown sugar, and fish sauce (if using). Stir everything well.
3. Adding the Liquids:
Add the coconut milk and chicken (or vegetable) broth to the pot. Bring the mixture to a boil, then reduce the heat and let it simmer for about 20 minutes, until the pumpkin becomes soft.
4. Blending the Soup:
After the pumpkin is cooked, remove the pot from the heat and use an immersion blender or regular blender to puree the soup until smooth and creamy.
5. Seasoning the Soup:
Return the soup to the heat and add the lemon juice. Adjust the salt and pepper to taste.
6. Serving the Soup:
Pour the soup into bowls and garnish with fresh cilantro. You can also drizzle some extra coconut milk on top for decoration.
Tips:
• If the soup is too thick, you can add a little water or more coconut milk to adjust the consistency.
• For extra flavor, you can sprinkle some fresh black pepper on top.
