People generally have normal lifespans in Avatar. Except for a select few Earth benders. This is explained in the Kyoshi novels, but was a retcon. During the show they accidentally made Kyoshi WAY too old, so when they made the novels about her they invented an earthbending technique to slow aging, which also happens to line up with Bumi's extreme age.

You ask good questions. For what I can tell, the bending arts are inspired by real martial arts. So, the moves are realistic and fluid and logical too.
Also, season 1 is more worldbuilding even if we have some characters developments.
When you reached season 2 & 3, you will be introduced to more bending arts. What I mean, is what you saw so far is just the basics, not the advanced arts and ultimate form of bendings in ATLA.
There are a lot of famous actors/actresses who voiced ATLA and its sequel the Legend of Korra.
Wait for the Fire LOrd Ozaï and I'm sure you will be surpized by his legendary voice, just sayin'.
