    Your cheese-cake looked more like a cheese-cream cake "Käse-Sahne-Torte" with several different layers. A traditional German cheese-cake "Käsekuchen" usually consists of two layers only, a dough one at the bottom and the cheese (= Quark / en: curd) one on top. It's more dense, looks more like a pie than a cake with a beige-yellow-ish color.

      Yes I think the same is not really a classic German cheesecake? But is very easy to make it to your own

    • @geneviere199
      @geneviere199 ปีที่แล้ว +10

      Problem might be that cake can either mean "Kuchen" or "Torte" - the usual Käsekuchen is an in fully baked mix of usual dough + cheese part - the Käsetorte consists of various parts of baked or non-baked parts that are pieced together after baking.

      Yeah, German cheesecake looks a bit different, the bottem is make out of "Mürbeteig" this is a hard dough similar to a hard cookie

    • @TarikDaniel
      @TarikDaniel ปีที่แล้ว +1

      @@geneviere199 Actually, a Käsetorte is just a round and highwr version of the Small Käsekuchen, which usually is rectangular or at least lower. This here was for sure neither.

    There is a basic difference between Kuchen and Torte. If you get them at a bakery it's more like a sheet cake (the lemon and coconut one you got) and is a little more dense and just one kind of layer...a Torte has more layers (like the ones from the Konditorei) - usually a drier bottom and the sponge cakes and different creams / jams and fillings in between.
    A typical cheesecake in Germany just has a bottom layer of something similar to pie crust and the "cheese" filling. If you get a good one it is dense but creamy and rich and always has a note of lemon usually - because that makes the curd taste better...also many variations with fruits in them (e.g. mandarins or even a poopy seed layer).
    Also try Marmorkuchen (every bakery should have it) with chocolate glaze around it - it is dense like a sheet cake but not dry (if it is freshly baked) - favorite cake for kids :). And in the summer: Obstkuchen when fruit is in season. Ask around which bakeries have good cake and bake them themselves. The ones in supermarkets usually don't :).

    Your "cheesecake" is "Käsesahnetorte". It is made from Quark and whipped cream.
    The normal "Käsekuchen" is just Quark, without the cream, not as high and more dense.
    Maybe you do not like the Black Forest Cake because the cherry part contains alcohol ("Kirschwasser"= cherry-schnapps)
    The layered cakes are called "Torte". There are Cremetorten (made from butter cream) and Sahnetorten (made from whipped cream).

    • @maxbarko8717

    Hello from Germany! There are two types of cheesecake. There is cheese cream, which is fluffy, and there is cheesecake, which is firm and also tastes different, mostly with raisins in it! The best cakes and tarts can be found in local bakeries that still make everything themselves! So handmade, and not mass-produced by large chains. It costs a little more at local bakeries, but it also tastes better because it's handmade! I like your channel and I'm glad you like Germany! welcome! Greetings Nephilim

    I would say the most common cake is "Marmorkuchen" and all kinds of fruit cakes (especially "Zwetschgenkuchen", "Erdbeerkuchen" and "Obstkuchen" (with different fruits)) Those are usually eaten with cream. For me, "Schwarzwälder Kirschtorte" is more of a tourist thing, but i come from a different region and don't like it too much. From the cakes you had i probably would have chosen the "Bienenstich". And then of course every region or maybe even every city/town/village has their own cake/cakes.
    In germany we also differentiate between "Kuchen" (cake) and "Torte" (tart?). You seemed to have a mixture of it. Torten are usually the ones that look fancier, but most people i know prefer cakes.
    There are different cakes like "Zwiebelkuchen" (onion tart) and "Kartoffelkuchen" (potatoe tart?) which are usually eaten warm (but also cold). I think Tanner may like those better, because they are really different. Those are often sold at markets. There is a whole "foodculture" around "Zwiebelkuchen" (mainly in wine regions), because when you can buy "Federweißer" (or "Neuer Wein" = "New Wine", which tastes more like lemonade), you drink "New Wine" and eat "Onion Cake" with it.

    • @OurStorytoTell
      @OurStorytoTell  ปีที่แล้ว

      Thanks for your comment! Fun to learn more about cakes & hear about the differences in region. We think you nailed it on the head though- Tanner would probably love those savory ones.

    On weekdays, most people are still at work, so Kaffee und Kuchen does not happen for most, but older people like to gather with others at a cafe or at home, and keep that daily Kaffee and Kuchen tradition going. On the weekends, though, you would find lots of families making this in between meal a somewhat bigger occasion, especially if there is a birthday or something else to celebrate.
    Also, even in those families where Kaffee und Kuchen on Saturdays and Sundays is still a regular thing, everybody tries to gravitate towards the Kuchen, because eating heavy cake (Torte), comes with obvious downsides for the waistline. So while there may be one Torte for Sundays, there won't be multiple, the rest will be Kuchen. Germany has lots and lots of Kuchen with fruit in it, it makes everything lighter and tastes good, so it is very popular to do that. Of your selection, I would call the lemon poundcake a Kuchen, the Bienenstich (a favorite of many), is either Kuchen or Torte, yours has a lot of cream in it, so I would call it Bienenstich-Torte, but you can also get the drier, but still yummy plain Bienenstich, which would be more a Kuchen. All the other examples are pretty much slices or what we would call Torte.
    My recommendation would be to try more varieties of Obstkuchen. Either make it or buy it. One very popular Obstkuchen ist the so called 'Obstboden'. Just google it and look at the images and you get the idea. With spring season coming up, don't miss out on that one. Especially in spring and summer you will find it made with berries and other lighter fruit, like cherries or apricots / peaches. It has a biscuit base and then the fruit, so it is simple, but so yummy. The base is sold in grocery stores everywhere - pre-baked, and you just put the fruit and gelatin glaze on top, and it is a no-bake yummy cake that is light and full of flavor. In Late Summer, you will start seeing Zwetschkenkuchen everywhere, and in fall, you will find Apfelstreusel, Birnentorte and all kinds of variations thereof. While the big Torten look very delicious, I often find the simple Kuchen more to my liking, with less cream or sugar.
    Lots to explore.

    One really different German cake that you should try when it's in season (late summer, early autumn) is Zwiebelkuchen. It's a savoury onion cake (bit like a quiche) to be enjoyed with new wine (Federweißer), which is the freshly harvested wine that has only just started fermenting and still has yeast in it. Doesn't get more South-West German than that.

    There are sooo many cheesecake recipes around. I think the traditional one doesn't have a base at all, but that might be regional. I defo know of others who have either a crumbled rusk with molten butter base and one with a dough.
    I also know about the Russian Plug-Cake (literal translation of Russische Zupftorte) - which has cacao in the dough and a cheesecakey inside.
    There are Cheesecakes with apples and cheesecakes like Philadelphia-cake with some jello powder in the cheese mass and is without baking. There is another cheesecake where you use cream cheese instead of Quark (as would be normally used in a German cheesecake), but the differences in that are rather subtle.
    The Quark-Sahne-Torte has a baked sponge cake base and a cream-quark layer on top with mandarines in it and it topped with the other half of the sponge cake.

    The one with almonds is called Bienenstich. One of my fave cakes (the one with cream, not the one with vanilla pudding). Wouldn't say no to the ol' chocolate cake either. I am starting to get a cake craving as I watch this, but sadly Ireland isn't so big on the selection of cakes available and if there is cake here it is often sweet on top of sweet, which is a bill of an overkill. Sometimes less is more. The sweetest honey is loathsome in its own deliciousness, as Shakespeare would say. That cheesecake you had is certainly unusual, as far as I am away it has a spongy base and then a layer of Quark on top (not a lot of different layers and certainly no pudding) and that is the top already which looks golden brown and softer. But each bakery or region has their own recipe I presume

    One comment: Most "original" cakes have much reduced sugar and butter nowadays. You can see this if you compare old recipe books (~50 years and older) and its modern twins. Often the amount of sugar is half of it was before, and esp. in commercial stuff butter (eg. Buttercreme-Torte) is replaced by pudding or similar stuff. I still remember original "Frankfurter Kranz" cake, when 1 little piece was enough to kill any diet for days... Same is true for many many recipes for Xmas cookies and such, they often have half the sugar they used to have - to be more "healthy". No, they are not healthier, they just don't taste that good any more (eg. Vanillekipferl). Sweets are never healthy, just eat less.

    A. It's NOT a traditional German cheese cake (=cheese cake with Quark - and it's the BEST. 😍😉) B. I can relate with the lenom cake. Taste-wise I don't know, too, why they are called "lemon cake" here. Besides the glace they usually taste just like an ordinary Rührkuchen. IMO not enough lemon zest in it becouse of the costs. Those from bakeries, which taste lemon-like, usually contain artificial flavors.
    I once was lucky to eat a french lemon cake: massive amount of lemon zest in it and infused with lemon juice sirup.🤤
    My tip: esp fruit cakes are the best when it's the season of the fruits.

    Well, that was a video right up my alley! Tanner seems to be a bit like my husband - not a too huge fan of sweets, but if it must be cake, it should be light and creamy instead of dense and with a lot of dough (and not too fatty nor too sugary, please!). Am I right? The cake varieties you got there look quite interesting; some of them I'd personally never buy (like the coconut/pineapple one or the strawberry one), because I can already see the denseness of the dough and the artificialness of the strawberry cake. But others, like the Bienenstich, the Käse-Sahne-Torte and the hazelnut one look quite good. As others have said, try fruit cakes when the respective fruits are in season - this will be cake heaven! Also, Schwarzwälder Kirschtorte is much better when it's home-made - I would hazard that you both would like it after all if you could try a home-made one. I must admit that I don't like many store-bought cakes because I grew up with superb home-made cakes and pastry and bake quite a lot myself. I'm often disappointed at bakery-bought cakes because my home-made one would have been much tastier (but maybe not that fancy-looking). So if you have time and are interested in the process, I'd encourage you to try and bake those cakes yourself! It often looks more difficult than it actually is.

    Bienenstich is basically a sin cause its so lecker. FunFact: The origin of the name "Bee Sting" is unclear. According to the legend of the baker's boy, in 1474 the inhabitants of Linz am Rhein planned an attack on their neighboring town of Andernach, since the Emperor had withdrawn the Rhine toll from the people of Linz and awarded it to the people of Andernach. On the morning in question, however, two baker's apprentices from Andernach walked along the city wall and ate from the bee nests hanging there. When they saw the attackers, they threw the nests at them, so that the people of Linz - stung by the bees - had to flee. A special cake was baked to celebrate - the bee sting. Only Google translated, sorry. xD

    Cakes from the branch bakeries are often not very good. "Particles" ("Berliner", Danish pastry) are ok overall. But for a really good cake, you should go to a pastry shop, even if the piece of cake there quickly costs 2-3 euros. But it's worth it, especially if you're not a cake fan.
