Nilagang Pata ng Baboy with Mais at Saba

  • This Filipino soup dish is the one we often serve especially during cold days. We used Pork hock or also known as “Pata” and added Sweet corn and Saba Banana to add a little sweetness that really compensates with the hot soup.
    Best served with warm steamed rice.
    Ingredients:
    1 kilo Pork Pata (Pork hock)
    1 pc. Sweet Corn
    3 - 4 pieces Saging na Saba
    1 medium sized Potato (sliced)
    2 medium sized Onion (1 Chopped and 1 sliced)
    1-liter of water
    1 cup Pork broth or 1 Pork bouillon cube diluted in 1 cup water
    1 tablespoon Fish Sauce
    2 - 3 tablespoons Corn oil
    Whole pepper corn
    Pechay leaves
    How to Cook:
    1. Prepare and Chop the Pork meat depending the size you prefer.
    2. Sauté Whole pepper corns and 1 medium sized onion.
    3. Add the Pork meat and cook until lightly brown.
    4. Pour 750ml water or until the pork meat are submerged.
    5. Wait for it to boil and remove the bubbles and scums from the meat.
    6. Simmer for 1 hour and 45 minutes or 30 minutes on a pressure cooker.
    7. Add 1 cup water if needed.
    8. Pour 1 cup Pork broth or Pork cubes diluted in 1 cup water.
    9. Bring to boil and add the Sweet Corn then cook for 5 minutes.
    10. Add the sliced Saba Banana and Potatoes and simmer for 10 more minutes or until the Corn, Banana and Potatoes are tender.
    11. At this point, add the Pechay leaves and cook for 3 more minutes.
    12. Serve with steamed white rice and “Patis na may kalamansi at sili”.

    Tried this and masarap! Simple yet satisfying :) Will cook this again! I didnt add patis and pork broth so it's low sodium version for my child. I also added 1tbsp of sugar.
