I'd not heard of a cajon before but your points about smaller drums vs full drum kits for acoustic session is very accurate. In Scottish and Irish folk music single side drums and hand drums like the bodhrán are very common. You won't often see someone carting a full kit to the pub. Would love to see you have a go at making something like a bodhrán.
I love extra builds like this. I actually built a cajon with my grandpa this summer, but we built it to his size, and he is a lot bigger than me hahahaha it ended up about 14"x22" far too big for me so I'm going to have to rebuild.

Mr. Anderson I think a good amount of drum sticks would damage the cajon but if it was built out of a different material I think it would work it would possibly change the sound because it would be wood on wood rather than a hand hitting it

Even though it sounds crappy because of the mic, it seems like it should sound well. Btw, if you are going to make a vocal footnote (that's what I call them 5:58) try using the same mic that you recorded the video with and putting the audio at the same level. Please keep doing what you love.
i've heard something along the lines of if you um, if you spread a thin layer of regular wood glue, i mean very thinly, and let it dry, and then give it a buff sanding with a really high grit to smooth it out again, then the layer of glue will help even out the wood's ability to absorb a stain and leave less uneven toning and blotching, haven't tried it myself but it might be worth looking into
