Pu-erh tea, little studied, I prepare and research pu-erh tea, and I can say that excellent deep fermentation teas are worth developing this segment of the tea market.

We have a 2003 pu'er tea cake in a box, the cakes iself has elephant art pressed onto it, and tree art on the rear side? We've googled it but cant find any pu'er tea cake with art on it like ours, its a big 600gram one, and we have no idea what its worth?

I usually brew tea for 5-45 seconds max, 1 to 2 minutes sounds risky!

It all depends on your own palate, as well as your other brewing parameters. Brew time is not a standalone measure of a tea’s strength - it works in conjunction with your water temperature and brew ratio (leaf:water volume) to determine the taste of your tea. If you’re using an extremely high brew ratio (as is customary in mainland China), for example 2 or even 3 grams of leaf per ounce of water (ie. filling your gaiwan/teapot with leaves), then you would absolutely want to decrease your brew time, or you will end up with an unpalatably intense brew. At Red Blossom, we prefer a more balanced brew ratio of 1g leaf per 1oz volume of water, so our suggested brew times are often a bit longer than what might be used in China. The benefit of our brewing method is that it extracts a wider spectrum of flavor into the cup than flash brewing with more leaves. This is due to the varying water solubility & rates of extraction for the different flavor compounds found in tealeaves. While we could use more leaf and shorter brew times, this would only extract compounds that are highly water soluble, thereby limiting the range of flavor in your brew. By using less leaf but a longer infusion, we allow more time for less water soluble compounds to extract as well, thereby increasing the range of flavor in the cup. Ultimately it’s up to you and your own preferences. We encourage you to experiment with new brewing styles - you might find a method that you enjoy even more!

@@redblossomtea Thank you so much for such a detailed and wonderful response! I will definitely experiment with different ratios! I have to first find how many ounces of water fit in my pot and then I will get it going!

It’s our pleasure! When you’re experimenting, try to change only one variable (brew ratio, temperature, or infusion time) each time, so you can see how each one impacts flavor. Then you can combine what you find to achieve the perfect taste.
