Even I used to think why indians store dals and spices in India. When I myself stayed there for 2 years, I realized it is necessary. Especially in highly humid areas, the grocery items gets spoilt within 15 days even if you have stored in airtight containers. So I can relate to her.

Sometimes they do. In my house, due to humidity there are always ants and bugs no matter what I do to prevent it. and I can't use many many pesticides because I have a pet in my house. so I have to put every single thing in fridge, even chilli powder and turmeric etc in fridge to protect them from bugs.

You should start buying things from local vendors. I know it’s lil stress n extra work for buying but it’s good way to support local vendors without any commission in btw. I use to order everything online but now I can see lot f difference whn I started buying things directly from shop.

Dall. Spices and eggs also can be kept in room temp. Too much of stuff in refrigerator will spoil our health. Try to eat healthy and fresh foods. If we big refrigerator we would be focusing on utilising the space hence we would more stuff inside. Prefer a 260 to 300 litre fridge for a small family. Maintenance and service cost in case of repair will be very high and tough.

Nice organization, but dhal, spices etc that can be kept outside. If u keep in fridge, you have to keep opening for everything. Each time cooling is lost. Not good for fridge. Some items like sooji can be kept in Fridge to preserve little longer.

Right .....it's really not required to keep them in the fridge.
you can store the garam masalas in an airtight glass containers outside also.
I keep them in my kitchen shelf and they stay fresh for more than a year also.
