When I was in 4th grade of primary school, our local firefighters came to visit us to teach us important things about fire. Number one was: NEVER add water to a grease fire. Put the lid on it to put it out!
always smother a fire, fire needs oxygen, whats water have? oxygen, smothering a fire kills the oxygen needed to sustain itself, which is why fire cant happen in space, i know i went on a tangent

Burning fat is _far_ above 100°C, so when you add the water it flashboils and shoots small burning droplets of grease everywhere, which can set an entire room on fire in an instant if you're unlucky! You need to either choke the fire out or move it somewhere it's not dangerous and let it burn and run out of fuel.
Anyone who doesn't know this is probably going to take your "choke the fire" the wrong way & end up with burned hands.

Well, a fire has usually no neck to hold onto (last I checked at least), so most people would hopefully put the lid on the pot or pan (if available) or a cutting board or anything that doesn't explode when coming into contact with intense heat.
