It is a symphonic metal band from Finland and they are quite popular in Europe. First you should try songs named Ghost love score, or Storytime. The best part of Pineapple Thief is the simplicity. I don't know another group that can milk so much use out of a single arpeggio - or in the case of the opening, just two notes on the guitar. The ability to use the simplest ideas to write these complex tracks is what leaves the atmosphere so haunting yet accessible. The opening is two notes, layered with another 3 notes on the acoustic. The simplest patterns create these perfect layers and textures to build upon. Then the song slowly oozes and evolves, constantly growing and withdrawing, always about to explode before simmering back to near-nothingness. The simplicity allows for space and silence to become its own instrument - and also gives Gavin space to shine - allowing the most basic guitar parts to not avoid beind boring, but become completely hypnotizing. Few bands use silence as well as them. Pulling back every time you expect it to move forward. It's a perfect tease that draws you in. Another great track for this kinda example is "Out Of Line" - while not their most popular, it's my favorite example of the minimalist approach and use of silence to create a fragile, delicate atmosphere that sucks you in and keeps you misdirected and guessing. Guitar wise, there isn't a single part that couldn't be learned by a beginner, and that's the brilliance - keeping it simple, yet with a purpose that masks a sophisticated complexity within it.
